Characteristics and tasting advice for the Bourgogne Chardonnay 2021 from Au Pied du Mont Chauve
Tasting
Appearance
The wine displays a pale golden hue with silvery highlights, reflecting the freshness and youth of this vintage.
Nose
The nose opens with elegant floral notes of acacia and hawthorn, alongside delicate aromas of white fruits such as pear and peach. Hints of citrus and fresh hazelnut complete this refined bouquet.
Palate
On the palate, this wine charms with its silky texture and fine tension. The attack is crisp, carried by a well-defined acidity that brings vibrancy. The palate reveals a generous, fruit-driven mid-palate focused on apricot and white peach, with touches of citrus and brioche. The finish is pure, balanced, and lingering, leaving an impression of elegant minerality.
Food and wine pairings
This Bourgogne Chardonnay is an ideal match for grilled fish, seafood, and shellfish. It also pairs beautifully with poultry in cream sauces, aged goat cheeses, or a selection of soft cheeses. Its freshness also makes it an excellent aperitif wine.
Serving and cellaring
This Bourgogne Chardonnay 2021 is best enjoyed at a temperature between 10 and 12°C. It can be appreciated now and through around 2028, during which time it will continue to develop aromatic complexity.
An elegant, mineral white wine from Burgundy from Domaine Au Pied du Mont Chauve
The estate
The daughter of one of Burgundy’s most renowned winegrowing families, Francine Picard took over in the late 1990s the estate historically run by her father. Domaine Au Pied du Mont Chauve spans the communes of Chassagne-Montrachet, Puligny-Montrachet, and Saint-Aubin, at the heart of some of the finest climats and terroirs of the Burgundy wine region.
Seeking synergy between the land and the wines, Francine Picard cultivates her parcels in keeping with the principles of biodynamics, applying passion and meticulous attention to crafting wines that reflect the identity of their terroir.
From a 110-hectare vineyard farmed using « agro-ecology », the Chardonnay and Pinot Noir of Domaine Au Pied du Mont Chauve are recognized for their quality, precision, and elegance.
Since May 2019, Antoine Lepetit de la Bigne, a specialist in biodynamic viticulture, has joined the Domaine team as Technical Director.
The vineyard
This Bourgogne Blanc is produced from parcels located in the Côte de Beaune, on clay-limestone soils that lend the wines a distinctive minerality.
The vintage
The 2021 vintage in Bourgogne proved particularly demanding for winegrowers. After a mild winter, spring was marked by frosts in early April, followed by cool, wet conditions in April and May, increasing pressure from fungal diseases. Veraison, in mid-August, benefited from welcome sunshine, but July and early August remained cool and humid. The harvest, which began around the second half of September, made it possible to bring in healthy grapes thanks to rigorous selection.
Winemaking and aging
The grapes are pressed directly after harvest, then the must is settled before being transferred to barrels or large-format vessels for fermentation. Fermentations are carried out with indigenous yeasts. Aging aims to preserve purity of fruit and freshness, with a measured use of oak.
