The estate
Founded in 1945 by Raymond Javillier, Domaine Patrick Javillier now extends across 11 hectares in the heart of Meursault, in the Côte de Beaune. Patrick Javillier, a trained oenologist, took over in 1974 and developed the estate with a technical approach while respecting Burgundian traditions. Since 2005, his daughter Marion Roue Javillier, the current president, has overseen the production and marketing of the red wines, while Pierre-Emmanuel Lamy supervises the whites. This family-owned Burgundy estate stands out for its parcel-by-parcel winemaking philosophy, aging each climat separately to fully express the diversity of the Côte de Beaune’s terroirs.
The vineyard
This Savigny-lès-Beaune 1er cru "Les Serpentières" comes from a 71-are parcel located on the southern slope of the Serpentières climat, at the entrance to the village. The Pinot Noir vines, around 60 years old at harvest, are rooted in a stony terroir of chalky limestone and red clay. This south-facing exposure and mineral composition give the wine its distinctive structure and aging potential. The site’s altitude and orientation promote optimal ripening while preserving the freshness characteristic of the appellation.
The vintage
The 2021 vintage proved particularly complex in Burgundy. A devastating frost in early April struck many vineyards, resulting in one of the smallest harvests in the region’s history. The parcels that were spared, such as Les Serpentières, benefited from favorable conditions thereafter, allowing for excellent ripening with fine aromatic concentration and preserved acidity. Harvest took place on September 24 in good conditions.
Winemaking and aging
The grapes for Savigny-Les-Beaune 1er cru "Les Serpentières" 2021 were hand-harvested with double sorting, first in the vineyard and then at the winery. After complete destemming, whole berries were placed in tank for a total maceration of 23 days, beginning with four days of cold soak at 12°C. Fermentation was carried out with indigenous yeasts, without the addition of oenological adjuvants, with three pump-overs. Aging continued for 15 months on lees without racking, in French oak barrels with a long, gentle toast, including 33% new barrels. The wine was bottled by gravity in February 2023, without filtration or fining.
