Description
Characteristics and tasting advice for the Riesling Niederhäuser Klamm Kabinett 2021 from Weingut Dönnhoff
Tasting
Color
The wine shows a pale yellow hue with golden highlights, reflecting the purity and freshness typical of cool-climate rieslings.
Nose
The nose reveals an aromatic bouquet of great finesse, dominated by notes of fresh citrus and stone fruit. Smoky mineral nuances—hallmarks of volcanic, porphyry-rich soils—add an extra dimension to the aromatic profile.
Palate
On the palate, this wine charms with its remarkable balance between lively acidity and a gentle sweetness. The texture is both light and fruit-driven, unfolding flavors of citrus and stone fruit that linger into a refreshing, mineral finish. The overall impression conveys an elegance typical of the Kabinett style.
Food and wine pairings
This riesling is an ideal match for seafood, delicately flavored fish prepared simply, as well as mildly spicy Asian cuisine. It also pairs beautifully with soft cheeses and makes an excellent aperitif wine.
Serving and cellaring
The Riesling Niederhäuser Klamm Kabinett 2021 is best enjoyed at a temperature between 8 and 10°C. A brief aeration of a few minutes in a decanter helps fully reveal its aromatic complexity. This wine can be enjoyed now for its brilliant freshness and will continue to evolve through at least 2060.

The estate
The Weingut Dönnhoff is among Germany’s most prestigious estates. Founded in the 1920s by Hermann Dönnhoff, the estate has been established in the Nahe region for over 250 years. Today, Helmut Dönnhoff and his son Cornelius, who joined the estate in 2007, run this family property together. The vineyard spans around 25 hectares, made up exclusively of parcels classified as Grand Cru. Recognized for its commitment to sustainable viticulture with Fair'n Green certification, the estate favors an environmentally respectful approach and minimal intervention in the cellar, allowing an authentic expression of each terroir.
The vineyard
Niederhäuser Klamm is an outstanding vineyard located in the Nahe region, planted on particularly steep slopes. Its name evokes a deep gorge carved into the rock, reflecting the site’s spectacular topography. The soils are dominated by volcanic porphyry mixed with slate and loess, giving the wines a distinctive mineral signature. These rugged hillsides require entirely manual work, from vine growing through harvest. The optimal exposure and the geological richness of this Grand Cru-classified terroir allow riesling to express all its complexity and its uniquely smoky mineral character.
The vintage
The year 2021 is considered a successful vintage for German rieslings. The cool climatic conditions encouraged the development of bright, natural acidity in the grapes, while allowing for harmonious ripening. This context produced wines of great elegance, with fine tension and a remarkable balance between freshness and fruit expression.
Vinification and aging
The Riesling Niederhäuser Klamm Kabinett 2021 is vinified according to the estate’s cherished minimal-intervention principles. The grapes are pressed quickly after the hand harvest to preserve aromatic freshness. Fermentation occurs spontaneously thanks to indigenous yeasts, in temperature-controlled stainless-steel tanks. Aging on fine lees, without excessive stirring, allows the wine to develop complexity while retaining its purity and mineral character. This non-interventionist approach respects the natural expression of the volcanic terroir.
