The estate
Founded in 1959 by William Fèvre junior, the Domaine William Fèvre Bourgogne has established itself as one of the leading owners of Chablis Grands Crus. Based in Burgundy, across 78 hectares divided into 90 parcels, the estate grows Chardonnay exclusively and owns around 15 hectares of Grands Crus. Since January 2024, the property has belonged to Domaines Barons de Rothschild Lafite. An environmental pioneer, William Fèvre Bourgogne was the first Chablis estate to be certified HVE3 in 2014, practicing biodynamics on its prestigious crus.
The vineyard
The Chablis Premier Cru Montée de Tonnerre comes from a 2.24-hectare estate located on the right bank of the Serein, extending from the Grands Crus Les Clos and Blanchot. The parcels, spread across the lieux-dits Pied d'Aloue, Chapelot and Côte de Bréchain, benefit from southeast, south and west exposures. The Kimmeridgian terroir, composed of marls and marly limestone dotted with white stones, offers shallow soils that encourage the Chablis expression of Chardonnay.
The vintage
The year 2022 in Burgundy began with a mild, dry winter, followed by late budbreak at the end of March accompanied by a frost episode. Flowering took place in excellent conditions at the end of May. Harvest began on August 31, revealing grapes in perfect health, with thick skins and generous pulp offering a good juice yield.
Vinification and aging
The Chablis 1er cru "Montée de Tonnerre" Domaine 2022 is produced using the gravity-flow principle, without pumping. Pneumatic pressing lasts between 1h30 and 2h00. Alcoholic and malolactic fermentations occur naturally in stainless-steel tanks. Aging extends over 19 months in total: 35% of the cuvée is aged for 5 to 6 months on fine lees in French oak barrels, before the whole finishes aging in small stainless-steel tanks.
