Tasting Notes
Appearance
The colour reveals a beautiful ruby red hue that tends to evolve towards subtle garnet nuances over time.
Nose
The aromatic bouquet opens with pure notes of red fruits, such as cherry, raspberry and redcurrant, accompanied by delicate floral touches reminiscent of violet and light spices.
Palate
On the palate, this wine offers a silky texture carried by a lively and refreshing acidity. The tannins are both present and well-integrated, leading to a lingering finish marked by fruit and a fine minerality.
Food and Wine Pairings
This red wine pairs beautifully with roasted poultry, a veal fillet with mushrooms, duck breast or a forest mushroom risotto. It also goes very well with soft cheeses such as brie or camembert.
Serving and Cellaring
To fully appreciate this Volnay 1er Cru "Taillepieds" Domaine 2021, it is recommended to serve it at around 16°C. With its lovely structure, it can be cellared for around ten years.
The Finesse and Elegance of a Volnay Premier Cru
The Estate
Founded in 1731 in Beaune, the House of Bouchard Père & Fils is a true institution in Burgundy, France. Initially specialising in the textile trade, it soon turned to wine, acquiring its first vineyards in 1775. Today, the estate spans more than 50 hectares of prestigious terroirs. Historically linked to the Château de Beaune, the property stands out for its deep commitment to agroecology. Since around 2022, Bouchard Père & Fils has belonged to the Artémis Domaines group, which continues this centuries-old expertise with the help of technical director Frédéric Weber.
The Vineyard
The "Taillepieds" climat is a renowned 7.1-hectare terroir located within the Volnay appellation. Facing south-east and positioned mid-slope, the vines benefit from ideal sun exposure. The soil is composed of marl and limestone, covered with a very stony surface that ensures excellent drainage and naturally limits the vigour of the vines. A subsoil layer of brown clay helps retain a water reserve. This vineyard, whose name evokes the sharp stones that once bruised the feet of the winegrowers, is cultivated according to environmentally friendly practices, in the midst of organic conversion.
The Vintage
The year 2021 stands out for weather conditions that gave rise to a classic and balanced vintage. Unlike the three previous years, marked by a very sun-drenched character, this growing cycle offered greater freshness. This cooler climate allowed the grapes to retain a lovely natural tension and develop harmonious maturity, without excess.
Winemaking and Ageing
The House's philosophy aims to express the full purity of the terroir through gentle, measured extractions. For this Volnay 1er Cru "Taillepieds" Domaine 2021, the winemaking process seeks to preserve the aromatic delicacy of the grapes. The wine then undergoes traditional ageing in oak barrels, carefully calibrated to soften the tannic structure and bring stability, without ever masking the identity of the climat.
