Tasting Notes
Colour
Coeur de Nature presents a sparkling champagne hue, driven by a predominant base of Pinot Noir complemented by a touch of Chardonnay, which lends it pale, luminous tones.
Nose
The nose is fresh and inviting, combining notes of biscuit with touches of bergamot, dried apricots and dried flowers, for a bouquet that is at once pastry-like and delicately floral.
Palate
The attack is lively and slightly saline, before revealing a crisp palate evocative of Anjou pear and mandarin. The structure is round and balanced, enhanced by subtle toasted nuances, leading to a fresh, mouthwatering finish.
Food and Wine Pairing
Coeur de Nature Devaux is a natural choice as an aperitif, thanks to its saline, savoury character. It also pairs beautifully with more refined dishes such as stuffed poultry, delicate offal, foie gras, shellfish or noble fish, as well as the region's soft-rind cheeses. At the end of a meal, it can be matched with chocolates, especially those enlivened with citrus notes or slightly bitter flavours.
Serving and Cellaring
Coeur de Nature Devaux is best served at a temperature of 8°C. This champagne can be enjoyed now and until around 2027.
An Organic Champagne Driven by Pinot Noir from the Côte des Bar at Devaux
The Estate
Champagne Devaux was founded in 1846 in Épernay, under the impetus of Claude-Josephte Devaux. After several generations marked by three widows at the helm, the brand was entrusted to the cooperative group Union Auboise, which owns it today. The House of Devaux is now based in an 18th-century manor in Bar-sur-Seine, in the heart of the Côte des Bar, and draws on a cooperative vineyard of 1,400 hectares bringing together around 800 growers.
The Vineyard
The grapes for this cuvée come mainly from the Côte des Bar, the southern part of Champagne, where Kimmeridgian marl and limestone soils predominate. The plots used for this cuvée are certified organic, reflecting the House's commitment to viticulture that is more respectful of the environment.
The Blend
Coeur de Nature is a non-vintage champagne, crafted from wines from certified organic plots in the Côte des Bar, allowing the House to maintain a consistent style from one release to the next.
Vinification and Ageing
Coeur de Nature Devaux is aged in tank, a choice that preserves the aromatic purity of the fruit and allows the freshness of organically grown Pinot Noir to express itself. The particularly low dosage heightens the precision and salinity that characterise this cuvée.
Grape Varieties
This cuvée is composed of 90% Pinot Noir and 10% Chardonnay, sourced from certified organic plots in the Côte des Bar.
