Description

Characteristics and Tasting Tips for "La Réserve du Pigeonnier" 2022 by Fosse-Sèche

Tasting

Appearance
This wine displays a deep garnet-red hue.

Nose
The aromatic bouquet shows beautiful complexity, blending floral notes of violet with ripe fruit aromas such as cherry and blackcurrant. Subtle mineral notes, liquorice and a light smoky touch enrich the whole.

Palate
The attack is refined and elegant, introducing a silky texture with exceptionally fine tannins. The palate reveals dark fruit flavours supported by a mineral, saline backbone typical of its terroir. The finish unfolds with freshness and persistence.

Food and Wine Pairings

This red wine pairs ideally with roast poultry, especially pigeon, as well as with red meats served with a mushroom or wild berry sauce. It will also elevate mature cheeses with an earthy character.

Serving and Cellaring

With excellent ageing potential, "La Réserve du Pigeonnier" 2022 can evolve in the cellar and be enjoyed until 2042 at the very least.

The Pure Expression of Cabernet Franc on a Singular Terroir

The Estate

Established in its modern form in 1998, Fosse-Sèche is today run by the twin brothers Guillaume and Adrien Pire, alongside their partners. Strongly committed to environmental stewardship, the estate stands out for its organic and biodynamic certification, as well as for the creation of a vast biodiversity refuge. The winemakers craft authentic wines, seeking to express the purity of their unique terroir with minimal intervention.

The Vineyard

Located on the Brossay plateau, this vineyard benefits from a Jurassic terroir that is atypical for the region, made up of flint and iron oxide, with no trace of free limestone. This geological particularity, combined with a cool, windswept exposure, gives the grapes a slow and gradual ripening. The vines, cultivated without any chemical inputs for more than thirty years, thrive within a preserved ecosystem. Although it is produced in this historic area, this wine is classified under the Vin de France appellation in order to fully assert its exceptional geological identity.

The Vintage

The 2022 vintage was marked by demanding weather conditions across the French vineyards. In this region, the growing cycle had to contend with early drought as well as episodes of intense heat. Despite this water and heat stress, the vines held up to deliver berries of beautiful concentration.

Winemaking and Ageing

The grapes are harvested by hand, followed by complete destemming and rigorous sorting. Maceration lasts 21 to 24 days at controlled temperatures. "La Réserve du Pigeonnier" 2022 is then aged on its lees for 33 months. This stage takes place exclusively in ovoid tanks made of porous concrete, with no time in wood, promoting gentle micro-oxygenation and preserving the brightness of the fruit.

Grape Variety

This wine is made exclusively from 100% Cabernet Franc, sourced from very old vines planted in 1951 and 1953.
