A mineral-driven Marsannay white

The estate

Built in 1990 by the Boisseaux family, Château de Marsannay has belonged since 2012 to Olivier Halley, who entrusted its management to Stéphane Follin-Arbelet. Located at the gateway to Dijon in Burgundy, the estate farms 34 hectares spread across Marsannay, Dijon, Fixin, Gevrey-Chambertin, Vosne-Romanée and Vougeot. In its final year of conversion to organic farming, this contemporary estate works with deep respect for its terroir.

The vineyard

The Les Champs Perdrix parcel covers 1.2 hectares at the top of the Marsannay hillside, at 350 meters above sea level, making it the highest area of the appellation. With a south-east exposure, the chardonnay vines take root in a shallow, clay-rich Comblanchien limestone soil.

Winemaking and aging

The grapes for the Marsannay Village "Champs Perdrix" 2022 are harvested by hand and then sorted on a table. Whole clusters are pneumatically pressed before a static settling of around 12 hours without enzymes. Alcoholic fermentation is carried out at low temperature. Aging takes place on total lees with bâtonnage as needed, in 20% new barrels and, for the remainder, barrels that have held one to four wines. The wine spends 11 months in barrel followed by 7 months in tank.
