Tasting
Appearance
This Chardonnay reveals a golden hue with brilliant highlights, typical of the great white wines of the Côte de Beaune.
Nose
The nose opens with delicate notes of white flowers and white-fleshed fruit, subtly enhanced by a hint of brioche from oak ageing.
Palate
The palate is full and fresh, driven by generous body and a well-defined acidity that brings tension and balance through to a lingering finish.
Food and wine pairings
This wine will pair beautifully with fine fish such as sea bass or sea bream, shellfish such as prawns or lobster, and white poultry served in a creamy sauce. It also goes very well with foie gras or asparagus.
Serving and cellaring
The Chassagne-Montrachet Village "Les Houillères" 2024 is ideally enjoyed at a temperature of 13°C. It can be enjoyed now but will also develop further in the cellar, and is best drunk by around 2034.
A Village Chassagne-Montrachet Shaped by Its Proximity to the Grands Crus
The estate
Domaine Bader-Mimeur is a family-owned estate located in Chassagne-Montrachet, in the heart of the Côte de Beaune, in Burgundy. Its 8-hectare vineyard, certified Haute Valeur Environnementale (High Environmental Value) Level 3, is now run by Marie-Pierre Bader, Alain Fossier, Nathalie Bernard and Sébastien Fossier. The estate continues a family tradition handed down from generation to generation, combining viticultural rigour with a deep attachment to a terroir lying at the foot of the appellation's most celebrated climats.
The vineyard
The "Les Houillères" cuvée comes from a plot of old Chardonnay vines, around 60 years old, located in Chassagne-Montrachet, in the immediate vicinity of the Grands Crus and not far from the boundary with Puligny-Montrachet. This privileged position gives the terroir remarkable quality potential, inherited from its geological continuity with the most prestigious plots in the area.
Vinification and ageing
The grapes for the Chassagne-Montrachet Village "Les Houillères" 2024 are harvested by hand and then whole-bunch pressed in a pneumatic press, for a slow pressing that respects the fruit. After cold settling, the juice is transferred by gravity into oak barrels, where fermentation takes place naturally with indigenous yeasts, followed by a measured ageing that preserves the freshness and aromatic purity of the Chardonnay.
