Appearance
The colour reveals a pale golden-yellow hue, enhanced by delicate greenish highlights. It stands out for its clarity and brightness.
Nose
Remarkably crisp, the nose offers a complex bouquet blending fresh and ripe citrus aromas (lemon, grapefruit, orange zest) with notes of green apple, plums and white flowers. The whole is lifted by subtle touches of herbs, walnuts and a fine minerality reminiscent of chalk and salt.
Palate
The palate seduces with its silky texture and a structure that is both svelte and precise. The lively acidity blends seamlessly with an intense, deep core of fruit. The tasting unfolds into a long, mouth-watering and controlled finish, marked by a stony, saline minerality.
Food and Wine Pairing
Ideal as an aperitif, this wine pairs wonderfully with a seafood platter, oysters or lemony white fish. It also shines alongside beechwood-smoked salmon, poultry in cream sauce, as well as matured cheeses such as goat's cheese or Comté.

The Purity and Tension of a White Burgundy Wine
The Estate
The story of Domaine Boris Champy began in 1984, driven by Didier Montchovet, a pioneer of organic and biodynamic viticulture in Burgundy. Initially made up of a single 0.5-hectare plot, the estate developed with a strong agroecological vision. In 2019, Boris Champy, the current owner, took over the entire property located in Nantoux. Today, the vineyard spans 12 hectares certified Ecocert and Demeter. The estate stands out for its deep commitment to biodiversity and to showcasing the high-altitude terroirs of the Hautes-Côtes de Beaune.
The Vineyard
The grapes behind this Burgundy wine come from plots located at over 400 metres of altitude in the Hautes-Côtes de Beaune. This distinctive terroir is built on a mosaic of soils composed of marl, clay and limestone. The vines, grown from old massale Selektion, are trained at high planting density and sometimes in a lyre system. The vineyard is farmed according to biodynamic principles, at the heart of a rich ecosystem that includes hedgerows, wildlife and sheep, without any chemical inputs since its replanting after phylloxera.
Winemaking and Ageing
The grapes for the Bourgogne Aligoté Doré "Sélection Massale" 2024 are harvested by hand at optimal ripeness. The winemaking process, with minimal intervention, uses indigenous yeasts in stainless steel tanks and 228-litre oak barrels, with no new wood used at all. The wine then undergoes an extended ageing period on lees of around 12 months, followed by a few months in tank before bottling.
