Colour
The wine shows a deep ruby hue, enhanced by brilliant highlights.
Nose
The nose opens with an expressive bouquet of fresh red berries such as raspberry, redcurrant and cherry. It gains complexity with delicate floral nuances of peony and violet, underscored by subtle hints of spice.
Palate
The attack is supple and precise, revealing an intense palate of superb depth. The fine, tight-knit tannic structure is perfectly balanced by lovely freshness, leading to a lingering finish with fruity and spicy accents.
Food and wine pairings

The estate
Founded around 1130 by Cistercian monks, Domaine du Cellier aux Moines is a historic gem set on the hillsides of Givry, in Burgundy. Acquired in 2004 by Catherine and Philippe Pascal and their children, the estate now covers around ten hectares. Under the technical direction of Guillaume Marko, the domaine stands out for its pioneering environmental commitment, with organic and biodynamic certifications. Combining respect for heritage with modern facilities such as its gravity-flow vat room, the domaine crafts authentic wines that faithfully express the singularity of their terroirs.
The vineyard
This wine comes from an exclusive 0.27-hectare micro-plot, the Clos Pascal, overlooking the renowned Givry Premier Cru. Enclosed by thick walls and facing due south at an altitude of over 300 metres, this terroir benefits from very stony, shallow clay-limestone soils resting on a bedrock of hard oolitic limestone. Replanted in 2010, the vines are trained on single stakes without trimming, at a very high planting density of 13,000 vines per hectare. The vineyard is farmed according to biodynamic principles, fostering rich biodiversity and deep rooting.
The vintage
2016 stands out as a generous vintage in France. After a capricious spring in Burgundy, marked by episodes of frost and rainfall, the summer proved hot and dry. A mild autumn then provided ideal weather conditions, allowing the growing cycle to come to a perfect close and yielding grapes of optimal ripeness.
Vinification and ageing
The grapes are harvested by hand to preserve the integrity of the bunches. On arrival at the cellar, the fruit for the Givry Village "Clos Pascal" Monopole 2016 is handled with the utmost care in an innovative vat room operating entirely by gravity across four levels. Fermentation favours the use of whole bunches, with minimal mechanical intervention to respect the raw material. The wine then undergoes meticulous ageing, divided between vats and oak barrels, refining its structure without masking the vibrancy of the fruit.
