Nose
The nose opens with an expressive bouquet of fresh red berries such as raspberry, redcurrant and cherry. It is further enriched by delicate floral nuances reminiscent of peony and violet, underscored by subtle spicy notes.
Palate
The attack is supple and precise, revealing an intense palate with superb depth. The fine, tightly knit tannic structure achieves a perfect balance with lovely freshness, leading to a lingering finish with fruity and spicy accents.
Food and Wine Pairing
This red wine pairs wonderfully with white meats in cream and mushroom sauces, fine poultry, veal dishes, or traditional Burgundian specialities such as eggs in meurette sauce. It will also complement small feathered game as well as pressed or lightly washed-rind cheeses.
The Depth and Rarity of a Givry Wine from Domaine du Cellier aux Moines
The Estate
Founded around 1130 by Cistercian monks, Domaine du Cellier aux Moines is a historic gem perched on the heights of Givry, in Burgundy. Taken over in 2004 by Catherine and Philippe Pascal, together with their children, the estate now spans around ten hectares. Under the technical direction of Guillaume Marko, the domaine stands out for its pioneering environmental commitment, holding both organic and biodynamic certifications. Combining respect for heritage with modern facilities, such as its gravity-flow winery, the domaine crafts authentic wines that faithfully express the singularity of their terroirs.
The Vineyard
This wine comes from an exclusive micro-plot of 0.27 hectares, the Clos Pascal, overlooking the renowned Premier Cru of Givry. Enclosed by thick walls and facing due south at over 300 metres above sea level, this terroir benefits from very stony, shallow clay-limestone soils resting on a bedrock of hard oolithic limestone. Replanted in 2010, the vines are trained using the échalas (single-stake) method without hedging, at a very high planting density reaching 13,000 vines per hectare. This vineyard is farmed according to biodynamic principles, encouraging rich biodiversity and deep root growth.
The Vintage
2016 stands out as a generous vintage in France. Following a capricious spring in Burgundy, marked by episodes of frost and rainfall, the summer season proved hot and dry. A mild autumn then provided ideal weather conditions, allowing the growing cycle to conclude perfectly and yield berries of optimal ripeness.
Winemaking and Ageing
The harvest is carried out entirely by hand to preserve the integrity of the bunches. Upon arrival at the winery, the grapes for the Givry Village "Clos Pascal" Monopole 2016 are handled with extreme gentleness in an innovative winery operating on four levels through total gravity flow. Fermentation favours the use of whole clusters, limiting mechanical intervention to respect the fruit. The wine then undergoes meticulous ageing, split between vats and oak barrels, allowing its structure to be refined without masking the brightness of the fruit.
