Tasting Notes

Colour
With a beautiful white hue, this wine reveals itself with brilliance.

Nose
The nose offers an aromatic bouquet marked by citrus notes, such as lemon, along with delicate touches of white flowers and honeysuckle. Aromas of stone fruit, such as peach, apricot and nectarine, intermingle with scents of yellow apple and ripe green fruit.

Palate
On the palate, this wine stands out for its rich, creamy texture, while retaining freshness and vivacity. The palate reveals notes of peach, melon and white flowers, balanced by a mineral and saline backbone. Subtle pastry, honey and vanilla notes from the ageing process round out the whole.

Food and Wine Pairing

This white wine pairs well with poultry in cream sauce, such as chicken or turkey, as well as the traditional coq au vin. It also complements seafood in sauce, crab or shrimp, along with terrines and pâtés. On the cheese side, it pairs ideally with Brie, Camembert, Gruyère or Gouda.

The Estate

Located in the heart of the Mâconnais, in the south of Burgundy, Domaine du Roc des Boutires boasts a historical heritage dating back to 1732. Formerly known as Château des Thorins, the estate was acquired in 2016 by the Parinet family, led by Édouard and Jean-Jacques Parinet. Technically directed by Brice Laffond, this estate stands out for its meticulous plot-by-plot approach and its transition to organic farming, begun in 2021. Today, the estate has established itself as a recognized player within its appellation.

The Vineyard

This Bourgogne wine comes from a vineyard of approximately five hectares, divided into fourteen distinct plots. Rising to altitudes ranging from 250 to 500 metres, the vines, averaging forty to fifty years old, thrive on soils composed of Jurassic limestone, clay and shale. The estate prioritizes respect for both plant and soil, with entirely manual harvests carried out in several passes to pick the berries at optimal ripeness.

Winemaking and Ageing

The grapes intended for the Bourgogne Blanc 2023 are transported in small crates before being conveyed by gravity to the pneumatic press for a gentle whole-bunch pressing. The juices then undergo cold settling at 8°C for two days. Alcoholic and malolactic fermentation begin naturally thanks to indigenous yeasts. Ageing takes place in oak barrels or vats, with bâtonnage, and continues for twelve months on fine lees.
