Tasting
Colour

The Elegance and Precision of a Volnay Wine by Domaine Henri Boillot
The Estate
Founded in 1885 in France, Domaine Henri Boillot is an essential reference in Burgundy. Located in Meursault, this 19-hectare family estate is now run by Henri Boillot, representing the fifth generation, supported by his son Guillaume. The estate stands out for its ultra-sustainable approach to viticulture, excluding any synthetic products, and for its fierce determination to preserve the authentic expression of its terroirs. Thanks to know-how passed down with great passion, the estate produces wines of remarkable purity.
The Vineyard
The Les Chevrets climat is a distinctive terroir located on the southern edge of the Volnay appellation, just below the famous Caillerets. A former stone quarry, this vineyard of around 6.35 hectares rests on brown clay-and-gravel soils at the surface and clay-limestone soils in depth, providing excellent drainage. The vines, averaging 25 years of age, are planted at a high density of 10,000 vines per hectare and are mechanically cultivated to encourage mineral concentration in the berries.
The Vintage
2024 was marked by cooler weather conditions during the growing season. Despite these climatic challenges, the grapes were able to reach full phenolic ripeness thanks to an extended growing season, resulting in wines characterised by lovely tension and great precision.
Winemaking and Aging
The grapes are harvested exclusively by hand at optimal ripeness. For this Volnay 1er Cru "Les Chevrets" 2024, the winemaking is what is known as whole-cluster vinification, retaining whole stems during fermentation in open-top vats with indigenous yeasts. The wine is then aged for 10 to 12 months exclusively in 350-litre French oak barrels, a distinctive technical choice by the estate that helps preserve the wine's aromatic freshness and delicacy.
