The 2020 Saint-Aubin 1er Cru Les Frionnes is one of the more reserved wines in the range, unwinding in the glass with aromas of orange zest, confit citrus, crisp yellow apple and white flowers. It's medium to full-bodied, satiny and incisive, with racy acids and a long, saline finish. Forget it for the better part of a decade in the cellar and reap the rewards, even if it will be approachable sooner.

Tasting

Colour
The colour reveals a bright golden yellow hue, both luminous and clear.

Nose
Initially restrained, the bouquet opens onto delicate floral notes and orchard fruit aromas such as crisp apple and white peach. It is then enriched with nuances of candied citrus and orange zest, along with a touch of marzipan and nuts, all underscored by a minerality reminiscent of wet stone and a very subtle oakiness.

Palate
On the palate, this white wine from Burgundy offers a satiny texture and a generous volume, perfectly balanced by incisive acidity. Flavours of white fruit intertwine with a strongly marked mineral and saline structure, reminiscent of chalk. The whole is taut, precise, and stretches into a remarkably persistent finish.

Food and wine pairing

This great wine pairs wonderfully with delicate dishes such as sole meunière, scallops lightly pan-seared in butter, or roast poultry with herbs. It will also enhance dishes based on white vegetables such as asparagus, seafood risotto, as well as softly ripened cheeses, such as brie or fresh goat cheese.

Service and storage

Built to stand the test of decades, the Saint-Aubin 1er Cru "Les Frionnes" 2020 needs a few years in the cellar to reveal its full complexity. It can be enjoyed at its best from around 2027, and will continue to evolve favourably until 2050 for bottles kept under proper conditions.

The estate

Officially founded in 1973 by Hubert Lamy, Domaine Hubert Lamy continues a long family tradition in Burgundy dating back to 1640. Now passionately run by his son, Olivier Lamy, this 18.5-hectare estate has become an essential reference. Renowned for his perfectionist approach and bold experiments, such as planting vines at very high density, Olivier Lamy crafts wines of great purity. The estate stands out for its deep respect for terroir and meticulous viticulture, elevating its cuvées to the pinnacle of their appellation.

The vineyard

The Climat "Les Frionnes" spans 2.36 hectares within the Saint-Aubin appellation. East-facing, on a mid-slope, this terroir benefits from a cooler microclimate that preserves a fine tension in the berries. The vines, some of which were planted in 1935, 1960, and 1985, are deeply rooted in very shallow clay-limestone soils. This white earth, rich in stones and Kimmeridgian limestone, provides exceptional drainage and gives the wine its distinctive saline signature.

The vintage

The year 2020 put the vineyard to the test with episodes of spring frost that significantly reduced yields. However, thanks to late and adapted pruning, the damage was limited. The end of summer, marked by warm and sunny conditions, allowed for ideal phenolic ripeness. The inherent freshness of the terroir played a key role, preserving a saving natural acidity in the face of the season's heat.

Winemaking and aging

The philosophy in the cellar aims to be as non-interventionist as possible, allowing the terroir of the Saint-Aubin 1er Cru "Les Frionnes" 2020 to express itself fully. After gentle pneumatic pressing and an overnight settling period, fermentation begins naturally thanks to indigenous yeasts. The wine then undergoes an extended aging of 18 to 24 months in 300- and 600-litre barrels aged one to five years, thereby limiting the imprint of new oak. Maturation concludes with a six-month rest in stainless steel tanks before bottling.
