Tasting
Colour
The colour reveals a deep purple hue with inky nuances, typical of a red wine of fine concentration.
Nose
The aromatic bouquet opens with intense notes of ripe black fruit, such as blackcurrant and blackberry. Subtle touches of orange blossom intertwine with a stony minerality, reflecting its terroir.
Palate
The palate offers a velvety, fleshy texture, supported by fresh, perfectly defined tannins. The acidity blends harmoniously with the fruity structure, leading to a persistent finish of great elegance.
Food and wine pairing
This red wine pairs wonderfully with roasted poultry such as duck or goose, as well as game birds. It will also enhance a fine cut of beef, braised lamb or characterful cheeses such as Époisses, Langres or a mature Comté.
Service and storage
To fully appreciate this Pommard Village "Les Noizons" 2022, it is recommended to serve it at a temperature between 14 and 16°C. Decanting may prove useful after several years of ageing, given the absence of filtration. This wine can be enjoyed now but will continue to evolve favourably until around 2032.

The estate
Founded in 1997 by Nicolas Rossignol, representing the fifth generation of winegrowers in his family, Domaine Nicolas Rossignol is a key reference in Burgundy. Still run today by Nicolas Rossignol, the estate spans 17 hectares across the Côte de Beaune. The domaine stands out for its environmentally respectful approach, incorporating biodynamic principles and adherence to the lunar calendar. Equipped with modern facilities in Beaune since 2016, the producer is dedicated to crafting pure wines that faithfully reflect the diversity and richness of their terroirs of origin.
The vineyard
This cuvée comes from the Les Noizons climat, located on the heights of the Pommard appellation, at an altitude ranging from 290 to 320 metres. South and southeast facing, the vines benefit from optimal sunlight exposure. The terroir is characterised by brown clay-limestone soils resting on ancient alluvial deposits, marked by a strong presence of dolomitic rock and a reddish tint due to iron oxide. The vineyard, whose vines were planted between the 1940s and the early 2000s, is cultivated using sustainable farming practices, without chemical herbicides, with exclusively hand-picked harvests.
The vintage
The year 2022 began with a mild winter and early spring, followed by abundant spring rainfall that replenished water reserves. The summer stood out for the absence of any major heatwave, offering cool, humid conditions that slowed berry ripening. Settled anticyclonic weather then arrived in September, allowing for the harvest of healthy grapes under favourable meteorological conditions.
Winemaking and ageing
After rigorous manual and optical sorting, the vinification of Pommard Village "Les Noizons" 2022 incorporates 30% whole clusters. Fermentation takes place using indigenous yeasts, accompanied by gentle pump-overs for soft extraction. Ageing takes place on fine lees for 18 months in oak barrels, 15 to 20% of which are new, without any racking. Malolactic fermentation is deliberately delayed until the following spring in order to enhance aromatic complexity.
