Tasting
Colour
The colour reveals a ruby hue, ranging from pale to medium, sometimes tinged with subtle garnet reflections at the rim.
Nose
The aromatic bouquet opens with notes of fresh red fruit, reminiscent of raspberry and cranberry. It then develops floral nuances of peony and rose petal, complemented by fine mineral and spicy touches, along with light herbal notes.
Palate
The palate offers elegant balance and a silky texture, carried by velvety, delicate tannins that are already well integrated. Beautiful acidity brings freshness to this finely grained wine. The persistent and complex finish reveals powdery tannins that highlight the wine's minerality and floral richness.
Food and wine pairing
This wine pairs wonderfully with roast poultry with herbs, guinea fowl or braised meats such as venison. It also goes very well with mushroom or truffle-based dishes, a meat tagine with mild spices, as well as cow's milk cheeses of moderate character such as Époisses or Langres.
Service and storage
For an optimal tasting of the Volnay 1er Cru "Mitans" 2022, it is recommended to decant it approximately thirty-five to forty minutes before serving and to enjoy it at a temperature between 10 and 13°C. This wine can be enjoyed young but also has excellent ageing potential, allowing it to be kept until around 2035.

The floral and mineral expression of a Volnay Premier Cru
The estate
Founded in 1997 by Nicolas Rossignol, a fifth-generation winemaker in his family, Domaine Nicolas Rossignol is a key reference in Burgundy. Initially made up of three hectares, the estate has grown to around 17 hectares today, notably thanks to the merger with the family estate in 2011. Still led by Nicolas Rossignol, the estate, now based in Beaune, stands out for its environmentally respectful approach and a gentle winemaking philosophy that favours infusion over extraction to reveal the purity of each terroir.
The vineyard
The plot of the Les Mitans climat, located on the mid-slope within the Volnay appellation, covers 0.72 hectares at around 250 metres of altitude, with a southeast-facing exposure. The vines, some of which were planted in 1952, thrive on a complex soil made up of limestone scree in the upper section, exposed bedrock in the middle, and deep clay at the bottom of the slope. The vineyard is managed according to the principles of biodynamics and sustainable farming, without any synthetic herbicides, with regular soil work to encourage biodiversity.
The vintage
The year 2022 began with a mild autumn and winter, marked by low rainfall levels. The growing cycle unfolded under very high summer temperatures, with record sunshine and four heatwave episodes. Fortunately, welcome rains in mid-August allowed the vines to continue their development under ideal conditions. Low disease pressure ensured a harvest of perfectly healthy grapes as early as the end of August.
Winemaking and ageing
For this Volnay 1er Cru "Mitans" 2022, the hand-picked harvest was vinified using an equal proportion of whole clusters and destemmed grapes. Alcoholic fermentation took place over approximately sixteen days in open vats, using indigenous yeasts, with gentle extractions through punching down and pumping over. The wine was then aged for seventeen months, beginning with three months in stainless steel vats before moving into French oak barrels (25% new). Malolactic fermentation was delayed until spring, and the wine was bottled without fining or filtration.
