The estate
Founded around 1750 by Étienne de Mermety and Louise le Breton des Chapelles, Domaine Perrot-Minot is one of the oldest estates in Burgundy, France. Located in Morey-Saint-Denis, this 13-hectare estate is now run by Christophe Perrot-Minot and his wife Marit Lindal Perrot-Minot. Representing the fourth generation, Christophe has profoundly transformed the estate's style since the 2000s. Favouring organic viticulture and minimal-intervention winemaking, the estate produces wines of great finesse, expressing the complexity of their terroirs with remarkable precision.
The vineyard
The Chapelle-Chambertin comes from a gently sloping, particularly sunny and early-ripening plot, located on the lower part of the Gevrey-Chambertin hillside. The vines, around 70 years old, thrive on clay-limestone soils rich in marine fossils dating back to the Jurassic period. The vineyard is farmed under certified organic viticulture, with soil work carried out exclusively by horse to avoid compaction and preserve microbial life. Yields are deliberately limited to between 20 and 25 hectolitres per hectare.
The vintage
The year 2022 began with an early and rapid flowering at the end of May. The summer proved hot and dry, marked by an intense heat peak in mid-June. However, the vines were able to draw on the water reserves accumulated in 2021 to avoid water stress. Despite hailstorms in June that locally impacted volumes, conditions allowed for optimal ripening leading up to an early harvest, which began on 31 August.
Winemaking and aging
The grapes for the Chapelle-Chambertin Grand Cru 2022 are hand-harvested and undergo meticulous sorting in the vineyard, then on a sorting table and by optical sorting. The winemaking process incorporates around 50% whole clusters with the central stem removed. Extraction is gentle, favouring pumping-over rather than punching down, with moderate fermentation temperatures. After malolactic fermentation, the wine is aged for 12 to 14 months in oak barrels (about 50% new oak sourced from the Tronçais and Allier forests) before bottling.
