The bouquet reveals a legendary olfactory signature, marked by great freshness. It releases floral and menthol notes, harmoniously blended with citrus aromas such as lemon and lime, white fruits like apple and pear, along with subtle hints of honey.

Palate
From the first sip, the palate offers an immediate sensation of richness, both supple and harmonious. This lusciousness is instantly balanced by an acidic and mineral framework that brings verticality. The finish proves long, subtle and of great purity.

The estate

Legally established in 1985, although its legacy dates back to the 1920s with Pierre Ramonet, Domaine Ramonet is an emblematic figure of Burgundy. This vineyard of approximately 17 hectares, anchored in the Côte de Beaune, is now under the direction of Jean-Claude Ramonet, alongside his daughter Anne-France. Famous for having been a pioneer in exporting its bottles to the United States, the estate stands out for its demanding philosophy. By favouring very old vines and particularly low yields, it crafts cuvées of exceptional purity.

The vineyard

The grapes for this cuvée come from the commune of Chassagne-Montrachet. The terroir consists of a mosaic of predominantly limestone and marl soils, offering optimal drainage and excellent exposure. The estate devotes meticulous care to its plant material, made up of vines around sixty years old. In order to ensure maximum concentration, yields are deliberately limited. This village wine also stands out for the inclusion of grapes from declassified premier cru plots, which gives it a singular depth.

Vinification and ageing

The cellar favours a respectful approach aimed at enhancing the expression of the terroir. For this vintage, vinification is accompanied by patient ageing on the lees. The use of new oak barrels remains very moderate so as not to mask the brilliance of the fruit and to preserve the mineral tension that defines the house style.
