In the glass, this white wine reveals a bright pale yellow hue, enhanced by delicate green nuances that reflect its great freshness and youth.

Nose
The aromatic bouquet opens with fine elegance, revealing citrus notes dominated by lemon. These intertwine with delicate touches of white flowers, along with a mineral thread showing subtle iodine and saline nuances.

Palate
The attack is lively and refreshing, carried by perfectly balanced acidity. The palate, remarkably light, reveals lemony flavours accompanied by discreet notes of almond, all underpinned by a distinctly chalky minerality. The finish lingers with elegance on a fine hint of bitterness that adds lovely complexity.

Food and wine pairing

Ideal as an aperitif to start a meal, this wine pairs beautifully with a seafood platter, oysters or clams. It will also enhance delicate fish dishes such as poached salmon, Mediterranean dishes with herbs, or a fresh goat cheese.

To fully enjoy the aromatic palette of this Bourgogne Aligoté 2022, it is recommended to serve it at a temperature between 10 and 12°C. Ready to drink now, this wine can be enjoyed until around 2030.

The estate

Acquired in 1955 by the Grandmougin family, Domaine Saint-Jacques is nestled in the heart of the village of Rully, in the Côte Chalonnaise. This Burgundy vineyard spans around 9 hectares, the vast majority of which is classified as Premier Cru. Now run by Christophe Grandmougin, representing the second generation, the estate stands out for its deep commitment to environmental stewardship. Supported by the third generation, the winemaker favours sustainable farming methods, steering the estate towards organic certification, in order to reveal the purest expression of its limestone terroirs.

The vineyard

This Burgundy wine comes from a specific half-hectare plot planted with old vines aged 50 years. Ideally facing east to capture the morning light, these vines thrive on clay-limestone soils. The vineyard is farmed according to certified organic principles, with mechanical soil work including ploughing with horses to preserve biodiversity and the vitality of the land. Planting density stands at 10,000 vines per hectare.

Winemaking and aging

The production of this Bourgogne Aligoté 2022 relies on traditional, meticulous practices. Grapes harvested at full ripeness undergo gentle extraction, limiting skin contact to preserve all the delicacy of the fruit. The process is carried out with great precision to avoid excessive oxidation, thus ensuring the aromatic brilliance and freshness of the cuvée.
