Tasting
Appearance
Beautifully clear, it reveals a pale yellow hue with subtle golden highlights, despite being bottled without filtration.
Nose
The aromatic bouquet opens with an elegant floral dominance, complemented by notes of candied citrus and fresh lemon. With aeration, delicate iodized and mineral touches emerge, enhanced by a subtle hint of white pepper.
Palate
The attack is lively and refreshing, offering lovely fruit intensity. The palate is driven by a mineral acidity that brings remarkable tension, perfectly balancing the fruit’s roundness. The long, persistent finish concludes with superb chalky notes.
Food and wine pairings
This white wine pairs beautifully with seafood, fresh scallops, or delicate white fish. It also complements local goat cheeses, white meats in light sauces, as well as refined vegetable dishes such as white asparagus.
The mineral elegance of a Sancerre white wine
The estate
Located in the Loire region, the Domaine Vincent Pinard embodies a family winemaking tradition whose documented origins date back to 1789. Formally established under its current administrative structure in 1996, this 17-hectare estate is now run by Florent and Clément Pinard. Representing the twentieth generation, the two brothers perpetuate ancestral expertise while incorporating modern sustainable practices, with organic conversion certification obtained in 2024. The estate stands out for its low-intervention approach, highlighting the pure and authentic expression of its terroirs.
The vineyard
The grapes for this cuvée come from two specific plots located around the village of Bué, in the heart of the Sancerre appellation. The vines, averaging around thirty years of age, thrive on gently sloping hillsides with southern to south-southeastern exposure. The terroir is characterized by “caillottes” soils resting on deep limestone subsoils. The vineyard is cultivated according to organic and biodynamic principles, with high planting density and all vineyard work carried out exclusively by hand.
The vintage
The 2024 vintage proved particularly demanding in terms of climate. After unusually warm months of February and March leading to early budburst, spring was marked by historic rainfall. This exceptional humidity created significant disease pressure throughout the growing cycle. Despite these turbulent weather conditions, which considerably reduced yields, the harvested grapes retained remarkable freshness and lightness.
Winemaking and aging
After manual harvesting and rigorous sorting, whole bunches of Florès 2024 are pressed slowly and gently. Fermentation starts spontaneously thanks to indigenous yeasts, in tanks kept at low temperature for around four weeks. The aging of this Sancerre white wine then continues on fine lees for seven to nine months, divided between older oak barrels (70%) and stainless steel tanks (30%).
