Tasting

Colour
The colour reveals a clear, deep ruby red hue leaning towards purple, reflecting a beautiful concentration.

Nose
Generous and complex, the bouquet reveals aromas of black berries, cherry and plum, underscored by a minerality reminiscent of graphite, raw cocoa and floral touches of violet and rose petal. With aeration, nuances of undergrowth, feathered game, smoke and a subtly vanilla-tinged oak unfold.

Palate
Medium to full-bodied in structure, the palate offers a deep and concentrated core of red plum, redcurrant and black cherry flavours. The tannins, both firm, elegant and finely powdery, are balanced by excellent acidity that brings freshness and definition. The long, complex finish is distinguished by a saline, crystalline minerality.

Food and Wine Pairing

This red wine pairs wonderfully with dishes of character such as feathered game (pheasant, duck), roasted or braised venison, as well as quality beef cuts like a rib steak. It also perfectly accompanies lamb in sauce or dishes based on mushrooms, root vegetables and truffles.

Service and Storage

To fully appreciate this 2023 vintage, decanting is recommended, along with serving at a temperature of around 15°C. Endowed with remarkable ageing potential, this wine will begin to reveal its full complexity after about ten years in the cellar and can be kept until around 2085.

The Elegance and Complexity of a Grand Cru from Burgundy by Dujac

The Estate

Founded in 1967 by Jacques Seysses following the acquisition of an estate in Morey-Saint-Denis, France, Domaine Dujac has become an essential reference in Burgundy. From an initial surface area of five hectares, the vineyard now spans approximately 17.5 hectares. Currently led by the new generation, embodied by Jeremy Seysses, his brother Alec and his wife Diana Snowden Seysses, the estate stands out for its commitment to organic farming, certified since 2011, and its emblematic use of whole-cluster winemaking, producing wines of great purity.

The Vineyard

The Clos de la Roche is the largest Grand Cru of the Morey-Saint-Denis appellation, located on the border with Gevrey-Chambertin. The estate cultivates 1.95 hectares of vines here, facing east and south, at an altitude of about 250 metres. This terroir takes its name from the large blocks of stone emerging at the surface of its shallow soils, composed of mid-Jurassic limestone and clay-limestone. All of these plots have been farmed according to organic principles since 2001, with the soil worked using traditional ploughing.

The Vintage

The year 2023 began under mild conditions, with a balanced distribution of rainfall and moderate temperatures. The growing cycle proceeded smoothly until a late and unprecedented heatwave arrived in August. These high temperatures allowed the berries to concentrate and reach optimal ripeness just before the harvest, which took place from 1 to 15 September, requiring rigorous sorting of the bunches.

Winemaking and Aging

The grapes for this cuvée are hand-harvested and vinified using 75% whole clusters and 25% destemmed fruit. Fermentation is triggered by indigenous yeasts in stainless steel vats, with a maceration period of about two weeks punctuated by gentle punching-down and pumping-over. After gentle pneumatic pressing, the wine is transferred by gravity into French oak barrels for ageing lasting 15 to 18 months.
