Tasting

Appearance

The wine displays a lovely delicate purple hue, reflecting gentle extraction and the moderate aromatic concentration typical of the vintage.

Nose

The nose reveals spicy notes typical of Savigny’s terroir, alongside aromas of violet and wild blackberries. This bouquet expresses, with finesse, the purity of the fruit and the authenticity of the climat.

Palate

On the palate, this wine stands out for its delicacy and elegance. It offers great finesse and refinement, with a supple, harmonious texture. Well-integrated tannins support the fruit expression without aggressiveness. Alcohol concentration remains moderate, bringing a particularly appealing freshness. The finish lingers with subtlety and generosity.

Food and wine pairings

This Savigny-Les-Beaune Village 2021 pairs perfectly with roast poultry, jambon persillé, as well as white meats in sauce. It also goes very well with mild, characterful cheeses such as Époisses, Langres, or regional goat cheeses.

A delicate and refined Savigny-Les-Beaune, an expression of centuries-old Burgundian know-how

The estate

Founded in 1880 in Beaune by Joseph Drouhin, the Joseph Drouhin House is now run by the family’s fourth generation: Philippe, Véronique, Laurent and Frédéric Drouhin. With one hundred hectares of vineyards spread across more than sixty Burgundy appellations, including fourteen Grands Crus and twenty Premiers Crus, the House embodies Burgundian winemaking excellence. A pioneer in organic and biodynamic viticulture, it obtained organic certification in 2009. A founding member of Primum Familiae Vini, Joseph Drouhin has upheld for over 140 years a philosophy of excellence built on finesse, the expression of terroir, and respect for the vintage.

The vineyard

Savigny-Les-Beaune lies north of Beaune. The appellation stretches across two slopes with different exposures: one facing due south toward Pernand-Vergelesses, the other looking east and northeast. The soils show great geological diversity, combining gravel dotted with ferruginous oolite on the Pernand side, and limestone with sandy nuances on the opposite slope. This mosaic of terroirs, situated between two hundred fifty and four hundred meters above sea level, gives Savigny-Les-Beaune wines their distinctive character and aromatic finesse.

The vintage

The 2021 vintage ranks among the most challenging that Bourgogne has experienced. A mild winter led to early budbreak, followed by severe frosts in early April that impacted yields. May saw record rainfall, creating humid conditions conducive to fungal diseases. An unsettled summer alternated between rainy periods and short heatwaves, without allowing for ideal ripening. Despite these extreme conditions, producers who managed these challenges wisely succeeded in crafting harmonious, elegant wines, marked by remarkable freshness and an authentic expression of terroir.

Winemaking and aging

The Savigny-Les-Beaune Village 2021 Joseph Drouhin comes from grape purchases from winegrowing partners who share the House’s quality standards. Harvesting is carried out by hand in small, ventilated crates. After complete destemming, vinification takes place in small open vats with maceration and fermentation lasting two to three weeks, punctuated by regular punch-downs and pump-overs. The yeasts remain indigenous. Pressing is done using a vertical press, a gentle technique that encourages delicate extraction. Aging continues in oak barrels, 20% of which are new, for a period of twelve to sixteen months determined by tasting.
