Tasting
Appearance
The wine reveals a bright yellow hue with slightly golden reflections, along with a subtle opalescence that reflects its ageing on lees and the absence of filtration.
Nose
The nose displays great aromatic complexity, blending notes of yellow peach, fresh butter and toasted hazelnut with delicate touches of acacia, chalk and kumquat zest.
Palate
On the palate, the wine offers a generous, enveloping flesh, perfectly balanced by a chalky verticality and vibrant acidity. The finish stands out for its length and mineral precision.
Food and wine pairings
This white wine pairs beautifully with seafood such as lobster or scallops with butter, a white fish carpaccio, sea urchins, as well as aged hard cheeses.
Serving and cellaring
For an optimal tasting experience, it is recommended to serve this wine at a temperature between 11 and 12 °C, after decanting for about 45 minutes in its youth. It will continue to evolve magnificently until around 2038.
The authentic expression of a Burgundy terroir by Pierre Girardin
The estate
Founded in 2016 in Meursault, at the heart of the Burgundy wine region, the Pierre Girardin estate is run by Pierre-Vincent Girardin. Representing the thirteenth generation of his family, the current owner began with 4.5 hectares of vines inherited from his father, Vincent Girardin. Today, the estate spans several prestigious appellations and stands out for its contemporary approach focused on the purity of the terroir. Committed to environmentally friendly viticulture, the estate favours micro-vinifications and minimal intervention to reveal the unique identity of each parcel.
The vineyard
The Climat from which this wine originates lies in the northern continuation of the Premier Cru "Champs Gain", in the commune of Chassagne-Montrachet. The vines thrive on well-drained slopes, composed of clay-limestone soils rich in marl and stony fragments. Farmed under organic conversion, this terroir benefits from meticulous manual harvesting. The mosaic planting allows the white grape variety to make the most of the most limestone-rich areas of the parcel, thereby encouraging a deep mineral expression.
Winemaking and ageing
Winemaking is based on a low-intervention approach, using exclusively indigenous yeasts. The wine ferments and ages for twelve months in bespoke 456-litre demi-muids. This extended ageing on fine lees helps limit the oaky imprint while promoting micro-oxygenation and aromatic complexity.
