Nose
The bouquet is intense and complex. It harmoniously blends aromas of white fruits such as apple and pear, notes of citrus and tropical fruits, and subtle herbal touches reminiscent of fennel and Mediterranean herbs, all underpinned by a fine minerality.

Palate

The Estate

Although the family's winemaking roots go back to 1559, the house of Torres was officially founded in 1870 in Vilafranca del Penedès, in Catalonia. Now run by the fifth generation, represented by Miguel Torres and his children, the estate has expanded into other prestigious regions, notably Castilla y León with the Pago del Cielo project. A pioneer in the fight against climate change, the B Corp certified company stands out for its strong commitment to regenerative viticulture, reducing its carbon footprint and preserving biodiversity, combining historical tradition with sustainable innovation.

The Vineyard

The grapes come from vines located in Villafranca del Duero, in the westernmost part of the Rueda appellation. Planted on gentle slopes along the left bank of the Duero River, the vineyard rests on calcareous, gravelly soils rich in rounded pebbles that provide excellent drainage. This terroir enjoys a continental climate with Atlantic influences, marked by significant temperature swings between day and night, ideal conditions for preserving natural acidity and developing the aromatic intensity of the berries.

Winemaking and Ageing

The Celeste Verdejo "Pago del Cielo" 2024 begins with a very gentle, short cold skin maceration of around three hours to delicately extract the aromas. Alcoholic fermentation then takes place in stainless steel tanks at rigorously controlled temperatures of around 14°C for about two weeks. Finally, the wine is aged on fine lees for two months, a key stage that gives it its silky texture and complexity on the palate without masking the purity of the fruit.
