Tasting
Color
The color reveals a deep ruby hue with garnet highlights.
Nose
The nose opens with aromas of vibrant red fruits, notably raspberry and cherry. Subtle floral notes mingle with hints of dried herbs, mint and sage. As the wine breathes, nuances of fennel and licorice add an appealing aromatic complexity.
Palate
The attack is fresh, with a certain liveliness. The tannins are supple yet delicately firm. The mid-palate remains pure and well-defined, with a medium-bodied structure and a silky texture. The finish offers good length, with lingering notes of fennel and red fruits, creating a mineral, elegant finish.
Food and wine pairings
This wine pairs harmoniously with grilled or roasted red meats, herb-crusted lamb or duck breast. It also elegantly accompanies hard cheeses such as Comté or Beaufort, as well as mushroom risottos.
Serving

An elegant, fresh Saint-Émilion from the Vauthier family
The estate
Château Moulin Saint-Georges is a little-known cru of Saint-Émilion, which joined the Vauthier family in 1921. It spans 7 hectares on a naturally well-drained clay-limestone hillside, where Merlot dominates, complemented by Cabernet Franc. Hand harvesting, parcel-by-parcel sorting, fermentation in stainless steel vats and aging in new barrels define a style combining power and freshness. The estate has been in conversion to organic farming since 2020.
The vineyard
The seven-hectare vineyard is located on terraces facing Château Ausone, in the Saint-Émilion appellation. The plots benefit from west and northwest exposures, creating a cooler terroir. The soil is composed of clay-limestone with natural drainage enhanced by the Fongaban stream. This terroir lends the wines their characteristic elegance and freshness.
The vintage
The 2013 vintage in Bordeaux proved exceptionally challenging, marked by major climatic difficulties. The wet, cold spring caused late flowering with widespread shatter, particularly affecting Merlot. The storms in late July and early August prevented vegetative growth from stopping before veraison. The mild, humid autumn encouraged the development of gray rot, requiring intensive sorting.
Winemaking and aging
Château Moulin Saint-Georges 2013 is harvested by hand and sorted by parcel before traditional fermentation in temperature-controlled stainless steel tanks with a maceration of around one month. Malolactic fermentation takes place in French oak barrels. Aging lasts approximately 18 months in French barrels with 85% new oak.
