The estate
Founded in 1984 by Chantal and Jean Berthet-Bondet, agricultural engineers settled in Château-Chalon, Domaine Berthet-Bondet produced its first harvest in 1985. The vineyard covers 15 hectares distributed between 4.5 hectares in AOC Château-Chalon and 10.5 hectares in AOC Côtes du Jura. Since 2018, Hélène Berthet-Bondet has perpetuated the family legacy. Certified organic since 2013, the estate cultivates all Jura grape varieties and produces the entire range of Jura wines.
The vineyard
This Château-Chalon comes from Savagnin vines averaging 35 years of age, planted on gray Lias marl. This Jura vineyard is managed using organic farming practices with grass cover every other row and mechanical soil tillage.
Winemaking and aging
Harvesting is carried out manually. The grapes are pressed as whole bunches before fermentation in stainless steel tanks. The Château-Chalon Vin Jaune 2017 then benefits from a minimum aging period of 6 years in old 228-liter oak barrels, under a veil of yeast. The barrels are not topped up, thus allowing the development of the oxidative character so specific to Vin Jaune.
