The estate
Domaine Caroline Frey, mainly established in Aloxe-Corton, spans approximately 7 hectares distributed across several Côte de Beaune appellations, including Savigny-lès-Beaune. Caroline Frey, a renowned oenologist, manages this estate in organic conversion according to biodynamic principles. After twenty years managing family vineyards in Burgundy and Bordeaux, she now favors benevolent viticulture focused on limited and high-quality production.
The vineyard
The Clos des Guettotes is a 0.282-hectare Monopole located in the Savigny-lès-Beaune appellation, in the northern part of the Côte de Beaune. This lieu-dit takes its name from the ancient medieval lookout posts that watched over the countryside. The vines, planted in 1947, rest on stony and gravelly soils, predominantly limestone, benefiting from a favorable exposure between 220 and 360 meters above sea level. This geological composition gives the wine its mineral precision and characteristic acid structure. The vineyard is managed using certified organic farming and biodynamic principles, in a regenerative approach that promotes biodiversity.
The vintage
The 2020 vintage in Burgundy benefited from considerable sunshine throughout the growing season, allowing for optimal grape ripening. These exceptional climatic conditions favored the development of beautiful aromatic concentration and remarkable fruity intensity, while preserving the balance and freshness characteristic of the appellation.
Vinification and aging
The grapes for the Savigny-lès-Beaune Village "Clos des Guettotes" Monopole 2020 are sorted manually before and after destemming. Vinification takes place in temperature-controlled truncated cone-shaped concrete vats, specifically sized to accommodate the harvest of this single plot. Aging takes place over a period of twelve to twenty months, combining French oak barrels and small sandstone vats (Clayvers) which favor micro-oxygenation. This approach preserves the purity of the fruit and the expression of the terroir without artifice.
