Tasting

Appearance

The color reveals a deep red hue with intense garnet-purple highlights.

Nose

The nose reveals aromas of ripe black fruit, particularly blackcurrant, plum and blackberry. Notes of cedar, camphor, dried tobacco and smoked meats add a beautiful aromatic complexity. Subtle touches of graphite and minerality complete this expressive bouquet.

Palate

On the palate, the wine is concentrated and densely fruity, with a tannic structure that is both firm and silky. The whole reveals power and elegance, supported by an unexpected freshness and a mineral salinity that bring tension. The finish stretches out for a long time on persistent earthy and fruity notes.

Food and wine pairings

This wine pairs perfectly with grilled or roasted red meats, lamb, game birds and duck confit. It also goes very well with mushroom dishes, particularly porcini, morels or truffles, as well as aged hard or blue cheeses.

Service and storage

Domaine de Cambes 2019 can be enjoyed now and will continue to evolve until around 2035. Decanting for about 45 minutes to 1 hour 30 minutes allows the tannins to soften and reveals its full aromatic complexity.

A concentrated and fresh Bordeaux red by Mitjavile

The estate

Domaine de Cambes belongs to the Mitjavile family, famous for Château Tertre Roteboeuf and Roc de Cambes. Located in the Côtes de Bourg on the banks of the Gironde, the estate benefits from an exceptional temperate microclimate. François Mitjavile acquired the property in 1988, and his daughter Nina now manages Roc de Cambes and supervises Domaine de Cambes. The family applies a winemaking philosophy focused on full phenolic maturity and the authentic expression of the terroir, producing wines of great intensity while preserving freshness and elegance.

The vineyard

The Domaine de Cambes vineyard covers approximately six hectares located on the lowlands immediately bordering the Gironde, in the Bordeaux region. The vines, aged 30 to 40 years on average, rest on clay-limestone soils enriched with alluvial deposits brought by the estuary. This composition confers a high clay content that maintains freshness and humidity even during hot periods. The southern exposure and the proximity of the Gironde create a regulating microclimate favoring slow and progressive ripening of the grapes. Vineyard management follows very strict sustainable agriculture principles, favoring manual work and respect for soil biology.

The vintage

The 2019 vintage in Bordeaux took place under generally favorable conditions. After a mild and rainy winter, spring allowed for good vegetative development without damaging frost. Summer brought moderate heat and sunshine, with sufficient rainfall to maintain the vines' water balance. The harvest took place in September and early October under dry and sunny weather, allowing the grapes to reach optimal physiological maturity while preserving freshness and balance.

Winemaking and aging

The grapes for Domaine de Cambes 2019 are harvested manually at full phenolic maturity, according to the Mitjavile family's characteristic philosophy. After several rigorous sortings, alcoholic fermentation takes place in concrete vats with indigenous yeasts, lasting three to four weeks for gentle and progressive extraction. Malolactic fermentation then takes place in new French oak barrels from Tonnellerie Radoux. Aging continues for approximately 18 months in these same barrels, with regular racking allowing for controlled oxygenation favoring the integration of the wood and the development of aromatic complexity.
