Tasting
Appearance
The color reveals a deep red hue with purple tints, a testament to the fruit's concentration and maturity.
Nose
The nose reveals beautiful aromatic complexity with notes of blackcurrant and blackberry, accompanied by touches of anise and licorice. Nuances of vanilla and wildflowers add elegance and refinement to the ensemble.
Palate
On the palate, the wine seduces with its fleshy texture and opulent character. The tannins are supple and silky, offering beautiful roundness without heaviness. Preserved freshness brings balance and harmony to the whole. The finish is persistent, with notes of dark chocolate and dried fruit.
Food and wine pairings
This wine is the perfect accompaniment to grilled red meats, game and braised beef dishes. It also pairs very well with a pork chop served with gratin dauphinois, or with aged cheeses.
Service and cellaring
Domaine de l'Aurage 2019 is best served at a temperature of 16-18°C. It is recommended to open the bottle at least one hour before serving, or even the day before, to allow it to fully express itself. This wine can be cellared until approximately 2029.
An opulent and fresh red wine from Castillon Côtes de Bordeaux
The estate
Acquired in 2006 by Louis and Caroline Mitjavile, Domaine de l'Aurage covers twenty-two hectares in the Castillon Côtes de Bordeaux appellation. Louis Mitjavile, son of François Mitjavile (owner of the famous Tertre Rotebœuf), developed his own style following international experience as a winemaking consultant. The first vintage under Louis Mitjavile's direction was 2007, and the estate quickly gained recognition for its wines combining opulence and freshness.
The vineyard
The Domaine de l'Aurage vineyard is located in Saint-Genès-de-Castillon, in the immediate vicinity of the Saint-Émilion Grand Cru appellation. The vines are planted on clay-limestone soils with siliceous elements at the bottom of the slope, a composition similar to that of Saint-Émilion. This amphitheater configuration offers optimal natural drainage. The planting density reaches 6,000 vines per hectare, favoring fruit concentration. The cooler climate of Castillon Côtes de Bordeaux allows for slow and gradual ripening of the fruit.
The vintage
The 2019 year began with dry conditions followed by a hot summer marked by a heatwave in July. These conditions created significant water stress, concentrating the berries and developing their full-bodied character. Stormy rains just before the harvest provided welcome hydration, softening the skins and allowing the tannins to reach graceful maturity. This vintage thus produced wines of character with a particular charm.
Vinification and aging
Harvesting is carried out manually with rigorous selection of the grapes in the vineyard. After meticulous sorting, the berries are fully destemmed and placed in vats for maceration lasting approximately one month. Alcoholic and malolactic fermentations take place under temperature control. Domaine de l'Aurage 2019 is then aged for eighteen to twenty months in new French oak barrels from the Radoux cooperage.
