Tasting
Color
The wine boasts an intense red color with deep highlights.
Nose
The nose reveals a beautiful aromatic complexity with notes of black fruit (blackcurrant, blackberry), plum and licorice. Aromas of roasted herbs, garrigue and spices (pepper) complete the bouquet. With aeration, nuances of powdered cocoa and hot stone are unveiled.
Palate
On the palate, the wine is both concentrated and elegant. The tannins, present with finesse, offer a silky and caressing texture. The structure is remarkable, with a beautiful freshness balancing the concentration. The finish, of great length, extends the fruity and spicy aromas with refinement.
Food and wine pairing
This Collioure is the ideal accompaniment to lamb, red meat in sauce and game. Its structure and aromatic complexity harmonize perfectly with dishes prepared with Mediterranean herbs.
Service and storage
Montagne 2021 is best served at a temperature of 16°C. It is recommended to open the bottle about one hour before serving to allow the wine to breathe and fully express its aromatic palette. This wine has a cellaring potential until around 2041.
A structured and elegant Collioure from Domaine de la Rectorie
The estate
Founded in 1984 by brothers Marc and Thierry Parcé, Domaine de la Rectorie today spans 34 hectares spread over some fifty plots in Roussillon. Located in Banyuls-sur-Mer, the estate perpetuates a family winemaking tradition dating back to 1904. Jean-Emmanuel Parcé, who arrived in 2010, represents the new generation and has committed the estate to organic farming. The estate's philosophy favors manual work, an artisanal approach and respect for the terroirs rather than technological interventions in the cellar. The estate is renowned for its Banyuls and Collioure wines, which authentically express the unique characteristics of the Côte Vermeille schist terroirs.
The vineyard
The Montagne cuvée comes from plots located at altitude in the mountainous areas of the estate, hence its name which distinguishes it from the Côté Mer cuvée. These vines are planted on schist soils typical of the Collioure appellation, at altitudes ranging from sea level up to 400 meters. This high-altitude location benefits from significant temperature variations between day and night, favoring the retention of acidity and the development of the wine's characteristic minerality. The poor, well-drained schist terroir naturally imposes low yields and concentrates aromas in the berries.
The vintage
The 2021 vintage benefited from balanced climatic conditions allowing for optimal management of grape ripeness. Despite a winter marked by frost episodes affecting French vineyards, milder spring conditions favored vegetative development. The year was characterized by beautiful phenolic maturity while preserving appreciable freshness, thus offering a remarkable balance between concentration and elegance.
Winemaking and aging
After destemming, the Montagne 2021 grapes undergo a prolonged maceration of 20 days, allowing for optimal extraction of tannins and aromas. Following malolactic fermentation, the wine is aged for 12 months in foudres and barrels, an aging process that favors the integration of the different grape varieties and the development of aromatic complexity while preserving the expression of the terroir.
