Appearance
The appearance unveils a deep ruby red hue with subtle violet highlights visible at the rim.
Nose
The nose is generous and expressive, revealing notes of black fruit such as plum and cherry, accompanied by aromas of licorice and delicate herbaceous touches. With aeration, mineral and undergrowth nuances gradually emerge.
Palate

The estate
Domaine du Château de Meursault has origins dating back to the 11th century, when the fief of Moulin Foulot was granted by Robert I, Duke of Burgundy. Acquired in December 2012 by the Halley family, the estate now spans 67 hectares spread over 110 plots across the most prestigious appellations of the Côte de Beaune. Under the direction of Stéphane Follin-Arbelet, the château has undertaken a remarkable qualitative transformation, obtaining organic certification starting with the 2022 vintage. The estate stands out for its environmental commitment and innovative agroecological practices, while preserving the authentic expression of each terroir.
The vineyard
The "Les Peuillets" climat covers 1.19 hectares of Pinot Noir vines aged around fifty years. Located in the Savigny-Lès-Beaune Premier Cru appellation, the plot benefits from a south-east exposure at an altitude of 240 meters. The soils consist of limestone and silt resting on a shallow clay layer, itself established on a subsoil of gravel and coarse sand. This geological structure ensures excellent drainage while maintaining good water retention. The exceptional early-ripening nature of this plot makes it one of the first to be harvested.
The vintage
The 2021 vintage in Burgundy proved particularly demanding. After a mild and wet winter, a severe frost episode in early April considerably reduced yields. Flowering took place under good conditions, partially compensating for the frost damage. The summer alternated between hot, dry periods and cooler, rainy phases, with temperatures generally below seasonal averages. Veraison benefited from favorable sunshine starting in mid-August, allowing for optimal ripening despite the reduced volumes. The harvest took place from mid-September to the end of September.
Winemaking and aging
After manual harvesting, the grapes for the Savigny-Lès-Beaune 1er Cru "Les Peuillets" 2021 are rigorously sorted by hand and then by optical sorting. The bunches are entirely destemmed before undergoing cold maceration for five to six days to extract color and aromas. Alcoholic fermentation and post-fermentation maceration last fifteen to twenty days, with regular pumping over and punching down adapted to the characteristics of the vintage. After progressive pneumatic pressing, the wine is aged for twelve to fifteen months in French oak barrels from several coopers (François Frères, Taransaud, Damy), with 25 to 30% new wood and the rest in barrels used for one to two wines.
