On the palate, this sake reveals a silky texture and beautiful complexity. Fruity notes emerge (melon, green apple, dried fruit), together with lovely freshness.
Pairings
This sake pairs wonderfully with certain cheeses, avocado, seafood and oysters.
Serving and storage
Serve well chilled, ideally in a wine glass to fully appreciate the complexity of its aromas. Once opened, it retains its qualities for up to four weeks, provided it is stored upright in the refrigerator or in a cool, dark place.
An exceptional sake, between tradition and innovation
The estate
As sake appeals to an ever-wider audience, Régis Camus, from Champagne, recognised its potential long before founding Heavensake in 2016. As the first Champagne cellar master to introduce the art of blending into the world of sake, he aims to create compositions that are both complex and perfectly balanced. Alongside the Tojis (master brewers), he crafts cuvées of remarkable purity and harmony.
This sake was created in collaboration with the Urakasumi brewery.
Origins and production method
This sake is produced from the terroir of Miyagi. No sugar or additives are added, ensuring a natural and authentic expression of the rice. With an alcohol content of 15.5%, it reveals a rich, structured profile that is perfectly balanced. Its fine polishing, at around 50%, allows pure and refined aromas to shine through.
