The estate
Founded in 1831 in Monthélie by Bernard Bichot, the Albert Bichot House settled permanently in Beaune in 1912. Managed by Albéric Bichot, it brings together six Burgundian estates totaling over 100 hectares of vines, including 13 hectares of Grands Crus. A pioneer in organic farming, this Beaune merchant combines historical know-how and mastery of prestigious estates, with a vision faithful to the Climats of Burgundy.
The vineyard
The Les Vaudésirs climat is nestled in the heart of the Chablis Grands Crus, in the Vaudésirs valley. The vines, with an average age of around 27 years, span 2.60 hectares of steep south-facing slopes. The terroir combines clay-limestone soils and a Kimmeridgian marl subsoil, an emblematic geological feature of the Burgundy appellation.
Winemaking and ageing
The grapes for the Chablis Grand Cru "Les Vaudésirs" Domaine Long-Depaquit are harvested by hand and meticulously sorted. After slow pressing at low pressure, alcoholic fermentation and ageing on fine lees last for 10 months, 75% in stainless steel vats and 25% in oak barrels (1 to 5 wines). Ageing then continues for an additional 6 months in stainless steel vats.
