Tasting
Appearance
The wine displays a deep ruby hue, adorned with garnet reflections and slightly orange tinges at the rim.
Nose
The aromatic bouquet reveals great complexity, combining aromas of stewed cherries, blood orange juice, and violet. With aeration, notes of black tea, leather, tobacco, and a mineral touch emerge.
Palate
Structured and dense, the palate offers smooth tannins. It expresses flavors of ripe cherry, red licorice, and dried rosemary, balanced by a fine acidity and a hint of bitter marmalade. The finish stands out for its long persistence.
Food and wine pairings
This Italian red wine pairs ideally with slow-cooked red meats, such as beef stew or braised venison. It also complements garlic and rosemary lamb, veal osso buco, mushroom risotto, or egg pasta with white truffle. Aged Parmesan is also an excellent choice.

The authenticity and structure of a historic Barolo wine
The estate
Founded in 1761 by Bartolomeo Borgogno, the Borgogno estate is the oldest continuously operating winery in the appellation. Located in the heart of the village of Barolo, in Piedmont, this historic property spans sixty hectares. Acquired in 2008 by the Farinetti family, it is now managed by Andrea Farinetti. The estate stands out for its commitment to traditional winemaking methods and its environmental dedication, with organic certification obtained in 2019. Borgogno thus embodies the perfect alliance between centuries-old heritage and sustainable viticulture.
The vineyard
The cuvée comes from the Liste cru, a 6.75-hectare vineyard facing south and southeast, located between 270 and 330 meters above sea level in the commune of Barolo. The vines, cultivated organically, thrive on clay-limestone marl soils rich in marine sediment deposits. This terroir benefits from a particularly cool microclimate, promoting slow grape ripening.
Winemaking and aging
After destemming and pressing, the fermentation of Liste Riserva 2020 starts spontaneously thanks to indigenous yeasts in temperature-controlled concrete vats. A long maceration on the skins, lasting up to fifty days, is carried out, followed by malolactic fermentation. The wine is then aged for six years in large Slavonian oak casks, before a further six months of bottle aging.
