Tasting
Colour
The robe presents a pale gold hue with bright green tints, highlighted by a fine and persistent effervescence that forms an elegant cordon.
Nase
The bouquet reveals a floral delicacy of acacia blossom, hawthorn and lime blossom, evolving into indulgent notes of brioche, toasted almonds and acacia honey, complemented by lemon and grapefruit zest.
Palate
The attack is lively and taut, supported by the chalky signature typical of the terroir. The silky texture reveals an elegant fullness with aromas of candied citrus and fresh hazelnut, accented by a saline note. The mineral and refreshing finish offers beautiful length.
Food and wine pairing
This Champagne pairs perfectly with seafood, particularly oysters, langoustines and scallop carpaccio. It is also an elegant accompaniment to white fish ceviche or fresh, creamy cheeses such as Chèvre Cendré or Brillat-Savarin.

The Estate
Founded in 1834 in Épernay by Auguste Boizel and Julie Martin, the Champagne Boizel House continues its family heritage under the direction of Florent and Lionel Roques-Boizel, representing the sixth generation. This independent Champagne House sources its grapes from classified vineyards, notably the Grands Crus of Cumières and Aÿ. A pioneer in Blanc de Blancs since 1929, Boizel combines ancestral craftsmanship with modern techniques to create exceptional Champagnes.
The Vineyard
The village of Villers-Marmery is located on the eastern flank of the Montagne de Reims and benefits from an eastern exposure on pure limestone soil. The vines thrive at an altitude of 140 to 180 meters on this 246-hectare Premier Cru terroir in Champagne, offering ideal conditions for the expression of Chardonnay.
Winemaking and ageing
This Blanc de Blancs is vinified entirely in stainless steel tanks to preserve the aromatic purity of the Chardonnay. Ageing on lees lasts for five years, revealing the complexity and finesse of this exceptional single-vineyard Champagne. This Champagne has a dosage of 3.5 g/l, giving it a pure and mineral expression.
