(a 50/50 blend of chardonnay and pinot noir; bottled in May, 2007; L11020): Bright yellow. Poached pear, lemon curd, buttered toast and chalky minerals on the fragrant nose. Sappy, penetrating citrus and orchard fruit flavors are complicated by hints of bitter quinine and tarragon. A smoky quality builds with air and carries through the long, smooth, mineral-tinged finish.

Appearance
This wine reveals a pale golden hue, enhanced by an exceptionally fine and remarkably persistent effervescence.

Nose
The aromatic bouquet proves complex, offering notes of toasted nuts, lemon zest, baked apple and brioche, accompanied by delicate floral touches. With aeration, nuances of crushed almond and honey unfold with elegance.

Palate
Ample and vibrant, the palate offers a remarkable balance between richness and precision. A lemony acidity brings great freshness, supported by a creamy effervescence, a chalky minerality and a lovely salinity. The mid-palate reveals flavours of yellow and red fruits intertwined with pastry notes. The long, invigorating finish evolves on touches of caramel, peach and quince.

Food and wine pairings
The estate recommends pairing this wine with Parmesan. It also pairs perfectly with roast poultry, white meats, seafood such as lobster or baked fish, as well as dishes in creamy or mushroom sauces. Its structure even allows it to enhance game-based preparations.

Serving and cellaring
This Champagne boasts excellent ageing potential. It should be enjoyed up to around 4 to 5 years after its disgorgement date to fully appreciate its aromatic complexity.

The authentic expression of the Ambonnay terroir

The estate
Founded in the 1950s by Gérard Soutiran, the estate has established itself as an artisanal benchmark at the heart of the Montagne de Reims. Today, the estate is led by the third generation, represented by Valérie Renaux and her husband Patrick Renaux. The domaine oversees a six-hectare vineyard, mainly located on the prestigious Ambonnay terroir. Recognised for its sustainable approach and respect for tradition, the house crafts top-tier cuvées that express all the richness and complexity of this exceptional terroir.

The vineyard
The vines thrive mainly on the Ambonnay terroir, one of the few villages classified 100% Grand Cru in Champagne, located on the Montagne de Reims. The plots benefit from a southern and south-eastern exposure ideal for grape ripening. The soils, composed of magnesium-rich chalk, lend the wines a remarkable minerality and salinity. The estate practises sustainable viticulture, favouring organic fertilisers, mechanical weeding and strictly limiting the use of herbicides to preserve biodiversity.

The cuvée

This Grand Cru Champagne is generally made up of 90% base harvest, to which 10% of reserve wines from an older vintage are added, in order to bring greater depth and complexity to the whole.

Winemaking and ageing
The production of this cuvée stands out for its extended ageing. The wine rests horizontally on its lees for 72 months before disgorgement. In addition, around 20% of the blend benefits from ageing in Burgundian oak barrels, which adds an extra textural dimension without masking the pure expression of the terroir.
