Color
The wine boasts a deep, intense red hue, enhanced by delicate raspberry highlights.
Nose
Powerful and seductive, the nose unveils a generous bouquet of black fruit, notably blackberry and blackcurrant, accompanied by notes of plum and cherry. Touches of vanilla and oak, derived from brief barrel aging, enrich this aromatic palette.
Palate
On the palate, this wine reveals a beautiful structure supported by supple and perfectly integrated tannins. The round texture envelops the palate while balanced acidity brings freshness. The whole exudes a sensation of power and complexity, extending to a fruity finish with slightly spicy nuances.
Food and wine pairings
This dealcoholized wine is the ideal accompaniment to an entrecôte à la bordelaise or an Australian "meat and three veg" pie. It also pairs with finesse with a red mullet terrine with pink peppercorns, a tomato tartare with red pesto or even a Trappe Échourgnac cheese. For a more original touch, it enhances a strawberry and pomegranate salad.

The estate
Founded in 2010 by Mathilde Boulachin and Fabien Gross, Chavin has established itself as an innovative merchant house based in Béziers. With around fifty hectares of organically farmed vines, Chavin distinguishes itself by specializing in premium alcohol-free wines.
The vineyard
This alcohol-free wine is produced from vines cultivated using organic farming methods in the lands of Occitanie. The Cabernet and Merlot varietals flourish in this Mediterranean terroir, benefiting from a climate conducive to their optimal ripening.
Winemaking and aging
Cabernet & Merlot Chavin is produced using a low-temperature vacuum distillation method. This innovative process preserves the original quality of the wine as well as the integrity of its natural aromas. Brief barrel aging adds subtle notes of vanilla and oak, without the addition of artificial flavors.
