Appearance
This wine reveals a deep, intense red hue.
Nose
The aromatic bouquet opens with notes of well-ripened black and red fruits, accompanied by floral touches reminiscent of peony. Nuances of spice, leather, truffle and cedar mingle with scents of garrigue over a mineral backdrop.
Palate
On the palate, the texture is both dense and velvety. The structure is built on ripe, juicy tannins, balanced by a lovely freshness. The finish lingers, carried by an earthy, mineral tension.
Food and Wine Pairing
A true gastronomic wine, this cuvée pairs perfectly with all sorts of meats. It goes wonderfully with roasted or grilled red meats such as lamb or beef, Mediterranean dishes with aromatic herbs, as well as hard cheeses.

Burgundian Elegance in the Service of a Minervois Terroir
The Estate
Founded in 2006, Domaine Anne Gros & Jean-Paul Tollot is located in Cazelles, in the Languedoc region of France. This project was born from the vision of two experienced Burgundian winemakers, Anne Gros and Jean-Paul Tollot, who still run the estate today. Captivated by this southern terroir, they acquired a vineyard here that now spans around 21 hectares. Their philosophy is built on a unique fusion: applying the rigour, precision and winemaking methods of Burgundy to Mediterranean grape varieties, in order to produce wines that combine concentration, freshness and minerality.
The Vineyard
The cuvée comes from the eponymous plot located within the Minervois appellation, at an altitude of around 300 metres. This terroir enjoys full southern exposure and consists of clay-limestone soils rich in white limestone from Agel. The Mediterranean climate here is tempered by cool winds from the north. The vineyard is managed using sustainable farming practices, with respect for biodiversity, controlled yields and manual work such as debudding. The vines are particularly old, with some varieties boasting century-old vines.
Winemaking and Ageing
The grapes for La Ciaude 2024 are harvested by hand, followed by meticulous sorting and full destemming inspired by Burgundian practices. Fermentation takes place in stainless steel tanks with indigenous yeasts, under strict temperature control to avoid any overripeness or excessive extraction. The wine is then aged 80% in oak barrels and 20% in stainless steel tanks, allowing the structure to develop while preserving the purity of the fruit.
Grape Varieties
This wine is a blend of Carignan, Syrah and Grenache, with a dominant proportion of very old Carignan vines.
