Tasting
Nose
The nose charms with its elegant restraint, hinting at notes of green walnut, candied lemon and fresh flour, which gradually unfold as the tasting progresses.
Palate
The palate is very fine, slender and almost incisive, without any trace of sun-ripened character despite the vintage. Lean in body, it stands out for its pronounced acidic tension, which carries the flavours of green walnut and candied lemon through to a remarkably nuanced finish reminiscent of St George's mushroom.
Food and Wine Pairing
Tradition 2022 is an ideal partner for smoked fish such as haddock, for dishes with parsley butter such as snails or frogs' legs, and for white meats in cream and mushroom sauces, particularly those with morels. It also pairs well with spicy dishes such as curries, and is a natural match for cheese dishes, especially Comté.

Tradition 2022 is best served at 14°C. This wine has a stated ageing potential of 30 years.

The Estate
Domaine Berthet-Bondet was founded in 1985 by Chantal and Jean Berthet-Bondet, two agricultural engineers who settled in Château-Chalon, in the Jura. Since 2018, their daughter Hélène, who changed careers to take up winemaking in 2013, has run the estate's 15 hectares. Certified organic since 2013, Domaine Berthet-Bondet has established itself as an essential reference in Château-Chalon, renowned for its mastery of wines aged under a veil of yeast and for its family succession from father to daughter.
The Vineyard
Sourced from plots in the Côtes du Jura appellation, the Tradition 2022 cuvée comes from vines with an average age of 30 years, planted on a terroir of gravel and marl. The vineyard is farmed organically, with grass cover between every other row combined with soil tillage, promoting balance and biodiversity across the plots.
Winemaking and Ageing
For the production of Tradition 2022, the grapes are hand-harvested and then whole-bunch pressed. Fermentation takes place in stainless steel tanks, followed by two years of ageing in 228-litre oak barrels, under a veil of yeast and without topping up, giving this wine its controlled oxidative character.
