Colour
This wine reveals a beautiful pale golden hue.

Nose
The aromatic bouquet reveals itself with great precision and considerable intensity, exuding delicate notes of white flowers, orange peel and honey. In its youth, it may show subtle notes of reduction that naturally fade with aeration, giving way to the brightness of the fruit.

Palate
The palate offers superb fruit concentration, underscored by dynamic tension and remarkable balance. The oak ageing integrates perfectly with slightly tropical fruit flavours and a judicious spicy touch, leading to a very long and beautiful finish.

Food and wine pairing

This cuvée is ideally enjoyed as an aperitif or alongside refined dishes such as smoked salmon, sea bass with fennel, gratin dauphinois or a mature Comté. More generally, this white wine pairs wonderfully with delicate seafood such as scallops, light poultry dishes, mushroom dishes in a creamy sauce, or fresh herbed goat cheeses.

Service and storage

The Bourgogne Hautes-Côtes de Beaune "Presse Verticale 382" 2023 offers excellent ageing potential and can be enjoyed until around 2040.

The estate

The story of Domaine Boris Champy began in 1984, when Didier Montchovet founded the estate, making it the first estate in Burgundy to obtain Demeter biodynamic certification. Located in Nantoux, the vineyard now spans 12 hectares. In 2019, Boris Champy took over the estate. The current owner passionately continues this environmentally respectful philosophy, placing regenerative agriculture, biodiversity preservation and the pure expression of terroir at the heart of his identity.

The vineyard

This wine from Bourgogne comes from the Montagne de Cras plot, located in the commune of Nantoux at an altitude of 382 metres. This complex terroir is characterised by soils rich in stones, pebbles and clay. The estate practises high-density viticulture here, with around 10,000 vines per hectare, pruned using the Guyot, Palmet and lyre methods. Of the four hectares that make up this plot, a full hectare is dedicated to biodiversity preservation, incorporating hedgerows, fruit trees and limestone grasslands.

The vintage

The year 2023 was marked by particularly nuanced and demanding weather conditions. After a mild winter that allowed for good water reserves to build up, the growing cycle had to contend with a spring frost episode, followed by cold and rainy weather. The late arrival of summer and September rainfall required meticulous work in the vineyards, with rigorous leaf thinning and strict sorting during the harvest to ensure optimal sanitary condition.

Winemaking and ageing

The grapes destined for the Bourgogne Hautes-Côtes de Beaune "Presse Verticale 382" 2023 are hand-harvested at perfect ripeness. The winemaking process is distinguished by the use of a traditional vertical press, allowing for a slow and gentle extraction over several hours to obtain a clear and highly concentrated juice. The wine is then aged on the lees for an average of twelve months in 228-litre oak barrels, half of which are new. Before bottling, it rests for a few months in stainless steel tanks. This wine is neither fined, nor filtered, nor cold stabilised.
