Tasting

Appearance
The colour reveals a lovely pale gold hue, illuminated by subtle silvery highlights.

Nose
The aromatic bouquet opens with delicate notes of white flowers such as acacia and hawthorn. It then unfolds into scents of white-fleshed fruits, evoking pear and juicy peach, underscored by a touch of fresh almond.

Palate
The palate offers a superb balance between taut freshness and enveloping roundness. With its silky texture, this wine stretches into a persistent, remarkably saline finish.

Food and Wine Pairing

This wine pairs beautifully with seafood, such as turbot, line-caught sea bass or pan-seared scallops. It also shines alongside poultry in a creamy mushroom sauce, delicate vegetable dishes such as an asparagus risotto, or soft-rind cheeses like Brillat-Savarin.

Serving and Ageing

To fully appreciate this 2024 Montagny, it is recommended to serve it at a temperature between 11 and 13°C. A light decanting can be beneficial while it is young. This wine has excellent ageing potential, allowing it to evolve favourably in bottle over several years.

A Montagny Premier Cru Combining Freshness and Complexity

The Estate

Founded around 1130 by the Cistercian monks of the Abbey of La Ferté, Domaine du Cellier aux Moines is a historic property located in Givry, in Burgundy. Having fallen into obscurity, this heritage gem was acquired in 2004 by Catherine and Philippe Pascal, the current owners, who have painstakingly restored it with their children. Under the technical direction of Guillaume Marko, the estate stands out for its environmental rigour, becoming a pioneer of organic and biodynamic viticulture in the region. It is now recognised for wines that combine tradition with exceptional precision.

The Vineyard

The Montagny Premier Cru Les Combes cuvée comes from a 0.7-hectare plot planted in 2012. Located between 270 and 310 metres in altitude, these vines benefit from a south-facing exposure on the mid-to-upper slope. The terroir consists of clay-limestone soils rich in oolitic stones, promoting excellent drainage and natural thermal regulation. All of these vines are cultivated with the utmost care according to the demanding principles of biodynamics.

Winemaking and Ageing

The making of this 2024 Montagny begins with an entirely hand-picked harvest, allowing for rigorous sorting of the bunches. The berries then undergo gentle pressing to preserve the full purity of the juice. Thanks to an innovative four-level gravity-flow winery, mechanical handling is kept to an absolute minimum. Fermentation takes place in oak barrels, followed by careful ageing on fine lees for twelve months, giving the wine its characteristic silky texture.
