From white marl over limestone, akin to the Kimmeridgian soils of Chablis, the 2023 Saint-Aubin 1er Cru Les Frionnes emerges from the glass with aromas of nashi pear, white flowers, oyster juice, white peach and lemon oil. On the palate, it is medium-bodied, pure and chiseled, with a crisp core of fruit and ample chalky extract, concluding in a long, saline finish. Oceanic in style, it will delight purists.

Tasting

Colour
With beautiful crystalline clarity, this white wine reveals a pale lemon hue, subtly tinged with green highlights.

Nose
Complex and evolving, the bouquet opens with aromas of citrus oil, white flowers and oyster shell. With aeration, it reveals notes of lime, pear, mirabelle plum and fresh almond, enriched by touches of fresh butter, jasmine and toasted bread. Subtle mineral and iodine nuances complete the whole.

Palate
The attack is lively and warm, carried by vibrant acidity. The texture is at once creamy, generous and remarkably dense. The mid-palate unfolds flavours of white fruits and citrus, supported by a precise mineral backbone evoking chalk and gunflint. The finish, long and persistent, lingers on buttery notes and toasted nuts.

Food and wine pairing

This great white wine pairs beautifully with noble fish such as turbot or John Dory, as well as with seafood like oysters and scallops. It will also elevate poultry in a creamy mushroom sauce, or aged cheeses such as a mature Comté.

Service and storage

To fully appreciate the Saint-Aubin 1er Cru "Les Frionnes" 2023, it is recommended to serve it between 11 and 12°C, after aerating it for about thirty minutes in large glasses. Approachable in its youth, this wine is built for long ageing and can be cellared until around 2043.

The estate

Although the family's winemaking history dates back to 1640, Domaine Hubert Lamy was officially founded in 1973 with eight hectares of vines. Located in the heart of Burgundy, France, this essential estate is now run by Olivier Lamy and his wife Karine. A true ambassador for his appellation, Olivier has raised the domaine to a level of excellence recognised worldwide. Now spanning 18.5 hectares, the estate stands out for its sustainable viticulture, carefully controlled yields and very high-density plantings, revealing the unique identity of each terroir with the precision of a goldsmith.

The vineyard

This cru comes from an exceptional terroir of 2 to 2.5 hectares within the Saint-Aubin appellation. The Climat "Les Frionnes", whose name evokes the coolness of its summer exposure, sits at an altitude of around 300 metres. The vines, planted in 1985 and 2000, benefit from a very high planting density, ranging from 11,000 to 14,000 vines per hectare. They thrive on shallow soils composed of friable Kimmeridgian limestone and chalk, forcing deep rooting that gives the wine its signature saline, mineral character.

Winemaking and ageing

After gentle pneumatic pressing and an overnight settling period, the musts of the Saint-Aubin 1er Cru "Les Frionnes" 2023 ferment with indigenous yeasts in dedicated cool cellars, extending the process over approximately 90 days. Ageing then takes place in 300- and 600-litre oak barrels aged one to five years, deliberately limiting the impact of new wood. After about 24 months of maturing on the lees, the wine rests for a further six months in tank before bottling.
