Characteristics and tasting tips for the Volnay 1er Cru "Santenots" 2024 from Domaine Matrot
Food and wine pairings
This red wine is ideally suited to characterful dishes. It is a wonderful match for hare à la royale or a Charolais beef daube, as well as for simpler fare such as rabbit terrine and cured ham.
Serving and cellaring
This Volnay 1er Cru "Santenots" 2024 has a fine structure that gives it an estimated ageing potential of ten to fifteen years. It can therefore be cellared and enjoyed until around 2039.
The power and precision of a Volnay 1er Cru from Domaine Matrot
The estate
The winemaking family's story began in 1835, but Domaine Matrot was truly founded in 1914, when Joseph Matrot and Marguerite Amoignon settled in Meursault, Burgundy. Today, sisters Adèle and Elsa Matrot run this historic estate of around 24 hectares. Long committed to an environmentally respectful approach, the domaine has practised organic viticulture since the 2000s, with official certification scheduled between 2023 and 2025. It stands out for its loyalty to tradition and its determination to preserve the purity of its terroirs.
The vineyard
Although it carries the Volnay 1er Cru appellation, the "Santenots" climat is geographically located in the commune of Meursault, not far from the Caillerets sector. The vines, around thirty years old, thrive on clay-limestone soils dominated by heavy red clays. This distinctive terroir lends remarkable intensity and structure to the grapes grown there. The entire vineyard is farmed according to the principles of organic agriculture, with meticulous soil work and strict yield control.
Winemaking and ageing
To craft this Volnay 1er Cru "Santenots" 2024, the grapes are harvested by hand. The berries are fully destemmed before undergoing a cold maceration lasting a few days. Fermentation then begins with indigenous yeasts, accompanied by daily punching down and pumping over. The wine is aged for fifteen months in oak barrels, with a measured proportion of around 20% new oak. Finally, it rests for three months in tank and undergoes lenticular filtration before bottling.
Grape variety
100% Pinot Noir.
