Colour
An elegant red hue, this wine reflects the nobility of its French terroir.

Nose
The aromatic bouquet opens with notes of blueberries, red berries, fresh herbs and crushed flowers, underpinned by a lovely minerality. With aeration, aromas of wild strawberry, black cherry, dark fruits and subtle touches of crushed mint leaves reveal themselves with great complexity.

Palate
The palate reveals a silky texture with supple, perfectly integrated tannins. Both concentrated and remarkably fresh, this medium-bodied wine unfolds with harmony. The long, spicy finish reveals notes of crushed black pepper, citrus zest, Assam tea and a delicate salinity.

Food and wine pairing

This wine pairs wonderfully with roasted poultry such as chicken or quail, as well as game meats like venison, wild boar or rabbit. It also enhances grilled beef cuts, a beef bourguignon or a traditional coq au vin. As for cheese, it ideally accompanies a mature Époisses or an aged Gruyère.

Service and storage

This Chambertin Grand Cru 2019 can be enjoyed now, but its structure allows it to evolve very favourably and be kept for drinking until around 2049.

The estate

Located in the heart of Burgundy, Domaine Perrot-Minot traces its origins back to the mid-nineteenth century, although its current name was definitively adopted in 1963. Now led by Christophe Perrot-Minot, this exceptional estate oversees a 12.5-hectare vineyard spread across the region's most prestigious terroirs. A staunch advocate of organic viticulture and a minimal-intervention approach, the estate is renowned for its absolute quest for authentic terroir expression, producing wines of great finesse that rank among the essential references of contemporary winemaking.

The vineyard

The Chambertin terroir lies on a gently sloping hillside south of the village of Gevrey-Chambertin. The vines, averaging fifty to fifty-two years of age, thrive on complex soils dating back to the Jurassic period. This geological substrate consists of clay- and marl-rich limestone, mixed with colluvial deposits. This unique composition provides optimal drainage while allowing the roots to draw essential nutrients from deep below, giving the grapes a remarkable identity.

The vintage

The year began with a mild, dry winter, leading to early bud break in the vines. Following a particularly warm March, May proved unusually cool, raising the risk of frost during flowering. Summer then set in with a hot, dry July, causing mild water stress. The absence of rainfall in August allowed for excellent berry concentration. The September harvest took place under ideal conditions, yielding healthy, ripe grapes with perfect balance.

Winemaking and aging

The production of the Chambertin Grand Cru 2019 favours minimal intervention. Fermentation takes place over two to three weeks in small open vats, driven by indigenous yeasts, with gentle pump-overs to preserve freshness. Malolactic fermentation occurs in the cellar. The wine is then aged in oak barrels, around 20% of which are new, for twelve to fourteen months. Finally, clarification is achieved naturally by gravity, with no fining or filtration before bottling.
