Tasting

Colour
The colour reveals a beautiful red hue with ruby and garnet reflections, of moderate and luminous intensity.

Nose
The aromatic bouquet shows great complexity, blending scents of black cherry and red plum with notes of black pepper, mineral earth and mushroom. Subtle touches of sweet spices, orange zest and floral nuances reminiscent of violet and rose further enrich this olfactory palette.

Palate
With a velvety and supple texture, this wine offers a body ranging from medium to full-bodied. The mid-palate reveals delicious aromas of red cherry, raspberry, blackberry and blackcurrant, supported by particularly silky tannins and lovely freshness. The long, graceful finish leaves delicate fruity, mineral and spicy impressions.

Food and Wine Pairing

This red wine pairs wonderfully with traditional dishes of French gastronomy such as beef bourguignon or coq au vin. It also perfectly accompanies grilled duck, veal with mushrooms, or vegetarian dishes such as wild mushroom risotto and roasted root vegetables. When it comes to cheese, favour pressed cooked cheeses such as Comté or Gruyère, as well as soft white-rind cheeses like Brie or Camembert.

Service and Storage

To fully appreciate the Morey-Saint-Denis "Village Domaine" 2022, it is advisable to serve it at a temperature between 13 and 15°C, letting it breathe for fifteen to thirty minutes before tasting. This wine can be enjoyed now to savour its youthfulness, but it has the structure to age very favourably in the cellar until around 2032.

The Elegance and Complexity of a Wine from Morey-Saint-Denis

The Estate

Founded in 1968 by Jacques Seysses, Domaine Dujac is located in Morey-Saint-Denis, at the heart of Burgundy, France. Starting from modest plots, this estate has become a true benchmark thanks to an innovative vision and a deep respect for terroir. Today, the second generation, embodied by Jeremy, Alec and Diana Snowden Seysses, runs the property. True to its values of excellence and sustainability, Domaine Dujac stands out through a meticulous viticultural approach, highlighting the authentic expression of its soils through environmentally friendly practices.

The Vineyard

The grapes for this cuvée come from several plots located on the lower part of the slopes of the Morey-Saint-Denis appellation, such as Les Cognées, Clos Solon and Les Porroux. Resting on predominantly clay and limestone soils, these vines benefit from extremely rigorous management. The estate favours massale selection for renewing its vines and applies the principles of organic and biodynamic farming, thereby fostering biodiversity and soil vitality.

The Vintage

The year 2022 stood out for its particularly high temperatures, ranking among the hottest seasons of this early century. Faced with this summer heat and low rainfall, the harvest began exceptionally early, as soon as the end of August. To preserve the freshness of the berries and avoid heat stress, picking was carefully organised during the coolest hours of the morning. The cool nights also allowed the grapes to retain lovely acidity despite optimal ripeness.

Winemaking and Ageing

The making of the Morey-Saint-Denis "Village Domaine" 2022 relies on a gentle, minimal-intervention vinification. The bunches, kept mostly whole, are tanked by gravity without any mechanical crushing. Fermentation starts naturally thanks to indigenous yeasts. After gentle pneumatic pressing, the wine is transferred by gravity for ageing of fourteen to eighteen months in French oak barrels. Bottling is generally carried out without filtration in order to preserve the full richness of the terroir.
