The precision and freshness of a Chablis wine

The estate
Founded in 1955 in Milly, Burgundy, the Jean Dauvissat Père et Fils estate covers 22 hectares, spread over 53 plots across seven communes in the Chablis region. Fabien Dauvissat, the founder's grandson, now manages the estate alongside his father Philippe, representing the fourth generation. Since 2009, Fabien has converted the estate to organic farming. This mosaic of terroirs on both banks of the Serein allows for the production of cuvées that express the typical mineral character of Burgundian Kimmeridgian limestone.

The vineyard
This Chablis Village "Mont-Main Sourdelle" comes from vines in the village of Beines on the left bank of the Serein, opposite the Côte de Léchet and Vau de Vey Premiers Crus. The terroir rests on Kimmeridgian limestone soils, the geological signature of this essential Burgundian appellation. This location imparts a firm minerality and precise fruit expression to the wine, characteristic of Chablis Village.

The vintage
The year 2023 in Chablis began with a mild winter, followed by a spring where frosts had little impact on the estate. From April to June, instability required increased vigilance in the vineyards. Despite the summer drought, the berries were healthy and of high quality.

Winemaking and ageing
Long, gentle pressing followed by static settling for 12 to 24 hours. Fermentation with indigenous yeasts. Malolactic fermentation prior to ageing, which is divided between 600-liter barrels and stainless steel tanks depending on the case, followed by blending after 12 months. Additional ageing of 6 months before bottling.
