Tasting

Colour
Ranging from pale to golden in hue, the visual appeal is enhanced by delicate green highlights.

Nose
The aromatic bouquet opens with floral and fruity notes dominated by almond and ripe grape. It then reveals a beautiful minerality with flinty accents, mingled with citrus aromas (lemon, grapefruit, pineapple), white-fleshed fruits such as peach, along with subtle hints of brioche, honey and acacia.

Palate
On the palate, the wine offers a pleasant sense of freshness and an airy lightness. Its texture is refined and elegant, revealing a perfect balance between natural richness and acidity, extending into a long and particularly thirst-quenching finish.

Food and wine pairing

This white wine pairs wonderfully with fine shellfish such as lobster, langoustines or prawns. It also brilliantly accompanies white meats and poultry in cream sauce, fresh goat cheeses, as well as more exotic dishes such as fish tagine or sweet-and-sour recipes.

Service and storage

For optimal enjoyment, this wine is best served at a temperature between 12 and 13°C. While it can be enjoyed young for its freshness, it also has the ageing potential to develop favourably until around 2028.

The estate

Founded in 1880 in Beaune by the young Joseph Drouhin, the House of Joseph Drouhin has established itself as a true institution in Burgundy. Now led by the fourth generation of the family, with Frédéric, Philippe, Laurent and Véronique Boss-Drouhin at the helm, the estate oversees a vast vineyard of around 100 hectares. A pioneer of sustainable viticulture, the estate is recognised as one of the region's leading biodynamic producers. Combining tradition and innovation, the Drouhin family strives to produce wines that authentically and precisely reflect the richness of their terroirs.

The vineyard

Located in southern Burgundy, at the heart of the Mâconnais, the vineyard of the Pouilly-Fuissé appellation rests on ancient soils dating back 150 to 180 million years. The vines, planted at altitudes of 200 to 400 metres on south-facing slopes, benefit from optimal sun exposure. The terroir consists of a complex mosaic of clay-limestone, schist, sandstone and fossil-rich limestone, giving the grapes a unique mineral signature. The fruit comes from long-standing partnerships with carefully selected local winegrowers, supplemented by the estate's recent acquisitions, all cultivated in accordance with organic principles.

The vintage

2023 stands out for its particularly warm weather conditions and exceptional sunshine, well above seasonal averages. After a rainfall deficit in winter, abundant precipitation in March helped replenish soil water reserves. The vine's growth cycle began early, as early as the end of March. The rapid ripening of the berries under high summer temperatures led to an early harvest, carried out at dawn to preserve all the freshness of the fruit.

Winemaking and ageing

The grapes are hand-picked and undergo rigorous sorting. At the winery, gentle pneumatic pressing is favoured to extract the juice while limiting oxidation. Fermentation takes place two-thirds in stainless steel tanks to preserve aromatic freshness, and one-third in 500-litre oak barrels to encourage malolactic fermentation and refine the texture. The wine is then aged for six to ten months, with regular tastings guiding the final blending decisions.
