The purity and freshness of a Sauternes wine crafted by Doisy-Daëne

The estate

Acquired in 1809 by Jean Jacques Emmanuel Daëne, Château Doisy-Daëne is a historic figure of Bordeaux, located on the limestone plateau of Barsac. Elevated to the rank of Second Cru Classé in 1855, the estate has been profoundly shaped by the Dubourdieu family since 1924. Today, Jean-Jacques Dubourdieu leads this family-owned estate with an environmentally respectful approach.

The vineyard

Spanning 18.2 hectares, the vineyard lies on a geological peculiarity of the Sauternes appellation: a thin layer of red clay-sand soils covering a limestone bedrock. This Barsac terroir, combined with the autumn mists born from the meeting of the Garonne and Ciron rivers, encourages the development of botrytis cinerea. The vines, averaging over 50 years of age, are cultivated according to sustainable practices, without chemical herbicides and with the use of organic composts.

The wine

Created in 1990, L'Extravagant de Doisy-Daëne is an exceptional cuvée, the result of an experimental approach initiated by Denis Dubourdieu. The winemaker sought to explore the limits of crafting a sweet wine from sauvignon blanc affected by noble rot and harvested at a stage of extreme concentration. The grapes, picked in early November, displayed an exceptional sugar richness, a high alcoholic potential and an extraordinary aromatic intensity. Since its creation, this cuvée has only been produced in exceptional vintages, in very limited quantities, from the estate's historic parcels.

The vintage

The 2025 year stands out for a particularly hot and dry summer, leading to very early harvests. A heatwave in mid-August limited yields, concentrating the berries. Fortunately, rainfall at the end of August created ideal conditions for an early onset of noble rot, ensuring a healthy and balanced harvest.

Vinification and ageing

The crafting of L'Extravagant de Doisy-Daëne 2025 requires a drastic selection. The berries, intensely affected by botrytis, are harvested grain by grain during meticulous successive sortings. The pressing, particularly long, extends over eight to ten hours to extract a must of great richness. Fermentation then takes place entirely in new French oak barrels, followed by ageing of approximately twelve months in wood.
