Appearance
In keeping with the style of the cuvée, the white wine would reveal a luminous pale yellow hue, adorned with greenish highlights.
Nose
True to the estate's signature, the bouquet would express subtle aromas of white fruits, such as apple and pear, combined with notes of white flowers. These would be accompanied by delicate buttery touches and a mineral backbone reminiscent of flint or chalk.
Palate
The palate would offer a precise balance between richness of texture and fine tension. Supported by a vibrant acidity, the texture would stretch towards a long, persistent finish, marked by a pleasant mineral aftertaste.
Food and Wine Pairing
This wine pairs ideally with delicate dishes such as shellfish (scallops, lobster), fine fish served with a butter sauce, or white meats such as poultry in sauce.
Serving and Cellaring
For optimal enjoyment, we recommend serving the Chevalier-Montrachet Grand Cru 2024 at a temperature between 12 and 14°C, after decanting briefly for 30 to 60 minutes. With considerable ageing potential, this wine can be enjoyed in its youth or cellared for several years to gain in complexity.
The Precision and Minerality of a Burgundy Grand Cru
The Estate
Officially founded in 2017, Pierre Girardin quickly established itself as an essential name in Burgundy, France. Representing the thirteenth generation of a winemaking family, Pierre-Vincent Girardin (or Pierre Girardin) runs this estate based in Meursault. From an initial inheritance of 4.5 hectares, the vineyard now extends over 13 hectares in Burgundy and 6 hectares in the Jura. The estate stands out for its contemporary approach, viticulture guided by biodynamic principles and a desire to enhance the purity of its terroirs through minimal-intervention winemaking.
The Vineyard
The Chevalier-Montrachet Climat is located in the commune of Puligny-Montrachet, at the top of the Côte de Beaune hierarchy. This high-altitude terroir rests on highly calcareous, shallow and well-drained soils, forcing the vine roots to draw their nutrients from deep down. To adapt to climatic challenges, the estate has chosen to increase the height of the canopy to better protect the grape clusters from the sun. Viticulture here is sustainable, with a gradual transition towards organic farming and observance of the lunar calendar.
Vinification and Ageing
The winemaking philosophy is minimalist, in order to preserve the expression of the terroir. The hand-harvested grapes are followed by gentle pneumatic pressing and fermentation triggered by indigenous yeasts. The Chevalier-Montrachet Grand Cru 2024 is aged in custom-made 456-litre oak barrels. This volume, larger than the traditional barrique, allows for a significant proportion of new oak while limiting the aromatic imprint of the wood. Interventions such as lees stirring or topping up are deliberately kept to a minimum.
